Utilization of Jackfruit Seeds As Effectiveness in Making Muffin Cakes

Consuming jackfruit fruit can produce waste in the form of jackfruit seeds, because only a
few people know the nutritional content and how to process jackfruit seeds, so (that) they only
discard jackfruit seeds after consuming the fruit and eventually (it will) become rubbish. Jackfruit
seeds can be processed into alternative ingredients in making muffin cakes. The purpose of this
study is to find out how to process jackfruit seeds so that it can be used as an alternative material
to make muffins, to determine the quality of jackfruit seed muffins related to texture, taste, and
color and to determine the effect of jackfruit seeds on the efficiency of financing muffin cake
making. Data is collected by observation method and also questionnaire method which will be
processed quantitatively. The results show that, (1)The process of making muffin cakes from
jackfruit seeds begins by separating jackfruit meat and jackfruit seeds that will be used, after being
separated from the meat, wash the jackfruit seeds thoroughly. Then (boil) jackfruit seeds boiled
for ± 15 minutes until the cooking water is brownish red. Drain boiled jackfruit seeds and peel the
skin. Then blender jackfruit seeds and (50 ml of) water 50 ml until smooth, and place it in the
basin. After that, make a dough consisting of 2 eggs and 150 grams of sugar, mix the two
ingredients with a mixer until fluffy, then add 100 ml (of) melted butter, 100 gram (of) flour, 1
teaspoon (of) baking powder, 100 ml (of) liquid milk, (1 teaspoon of) vanilla 1 teaspoon, and
jackfruit seeds that have been blended 150 grams (150 grams of blended jackfruit seeds), then mix
again until it becomes a soft mixture. After that, pour the mixture in a muffin cup approximately
¾ cup muffin (cup). After that, put it in the oven and bake for ± 30 minutes with a temperature of
150℃. After 30 minutes, jackfruit seed muffin cake can be removed and served.
(2) The quality of muffin cakes from jackfruit seeds is quite good. But jackfruit seedless muffins
are better than muffin seeds??. (3) By using jackfruit seeds as an (the) alternative material for
making muffins can save costs by 11.06%. As for our suggestion, it is necessary to choose good
quality jackfruit seeds to get more perfect results from the use of jackfruit seeds as an alternative
material in making muffin cakes. Jackfruit seeds that have good quality are newly released
jackfruit seeds from their flesh.
