PREFACE

As a part of curriculum of the degree in Hotel Management and

Catering Technology and Applied Nutrition the Second year

students are required to undergo Training for a period of 17

weeks in a hotel for industrial exposure.

This training is meant to give the students a brief glimpse of the

industry and help them in gaining a new perspective of the

industry that they have decided to join.

The training helps the students to be more appreciative of the

finer points of their education and gives them a basis to ask in

depth questions from their teachers after their experience in their

respective hotels. I compelled this report under the guidelines lied

down by the NATIONAL COUNCIL DEGREE OF HOTEL

MANAGEMENT. On my part it has been an effort to present

this report in a comprehensive lucid manner. The observation

made in the major department of the hotel and the details

regarding training schedule are mentioned herein.

INTRODUCTION

HOTEL INDUSTRY:

MEANING OF HOTEL -

According to the British laws a hotel is a place where a “bonafide

traveller can receive food and shelter provided he is in a position

to for it and is in a fit condition to receive”.

There have been different definitions of Hospitality. Broadly

speaking, hospitality is the act of kindness in welcoming and

looking after the basic needs of guests or strangers, mainly in

relation to food, drink and Accommodation. A contemporary

explanation of hospitality refers to the relationship Process

between a guest and a host. When we talk about the “hospitality

industry”, we are referring to the companies or organizations


which provide food and/or drink and/or Accommodation to

people who are away from home. However, this definition of the

“Hospitality industry” only satisfies most situations. Can you

think of any circumstances?

The hospitality industry is a broad category of fields within

service industry that includes lodging, event planning, theme

parks, transportation, cruise line, and additional fields within the

tourism industry. The hospitality industry is a multibillion-dollar

industry that depends on the availability of leisure time and

disposable income. A hospitality unit such as a restaurant, hotel,

or an amusement park consists of multiple groups such as facility

maintenance and direct operations (servers, housekeepers,

porters, kitchen workers, bartenders, management, marketing,

and human resources etc.).

Hotel operations vary in size, function, and cost. Most hotels

and major hospitality companies have set industry standards to


classify hotel types. An upscale full-service hotel facility offers

luxury amenities, full service accommodations, an on-site

restaurant, and the highest level of personalized service, such as a

concierge, room service and clothes pressing

staff. Full service hotels often contain upscale full-service

facilities with a large number of full service accommodations, an

on-site full service restaurant, and a variety of on-site amenities.

Boutique hotels are smaller independent, non-branded hotels that

often contain upscale facilities. Small to medium-sized hotel

establishments offer a limited amount of on-site amenities.

Economy hotels are small to medium-sized hotel establishments

that offer basic accommodations with little to no services.

The precursor to the modern hotel was the inn of medieval

Europe. For a period of about 200 years from the mid-17th


century, coaching inns served as a place for lodging for coach

travellers. Inns began to cater to richer clients in the mid-18th

century. One of the first hotels in a modern sense was opened in

Exeter in 1768. Hotels proliferated throughout Western Europe

and North America in the early 19th century, and luxury hotels

began to spring up in the later part of the 19th century.

Usage rate, or its inverse "vacancy rate", is an important

variable for the hospitality industry. Just as a factory owner would

wish a productive asset to be in use as much as possible (as

opposed to having to pay fixed costs while the factory is not

producing), so do restaurants, hotels, and theme parks seek to

maximize the number of customers they "process" in all sectors.


HISTORY

The LaLit Ashok is one of the leading hospitality chains in


India. Headquartered in New Delhi, the company opened its first
hotel here in 1988 under the dynamic leadership of Founder
Chairman Mr. Lalit Suri, who spearheaded the Group‟s
unprecedented expansion plans.

Rapid expansion and consolidation of its leadership position


continues under the enterprising stewardship of Dr. Jyotsna Suri,
who took over as Chairperson & Managing Director in 2006.

All hotels within the group operated under the brand The Grand
– Hotels, Palaces & Resorts. It was re-branded as „The LaLiT‟
on November 19, 2008 as a tribute to the company‟s Founder
Chairman Mr. Lalit Suri.

The company offers twelve luxury Hotels, Places & Resorts and
two mid market segment hotels under The LaLiT Traveller
brand offering 2261 rooms. In addition, we also hold the
exclusive management rights to operate hotel in London
offering 70 rooms.

PLACES TO VISIT

Bangalore is cohabitation of modern architectural marvels and


ancient intricately designed landmarks and one can never run out
of places to visit in Bangalore. Bangalore is famous as the silicon
valley of India because it has been a hub of IT companies.

Earlier It was fondly called as the “garden city of India” for the
greenery and vegetation that is found in abundance. The quirky
cafes, the quaint temples, the vibrant shops, the vast expanse of
trees and gardens, a dynamic and diversified blend of people, art
galleries and culture and the rooted Carnatic music melodies and
cultural dance forms; Bangalore indeed is a cosmopolitan city.

Bangalore tourist places can be categorized in heritage buildings,


modern architecture, wildlife parks and sanctuaries, waterfalls,
rivers, theme parks etc. It boasts of an amazing nightlife with
upbeat clubs and pubs coexisting along the peaceful temples in
great harmony.

Kannada is the main language that is spoken by the locals of the


city, however, a great chunk of the diversified population uses
English as a common language to communicate.

Venkatappa Art Gallery, Bannerghatta National Park, Tipu


Sultan‟s summer palace, Cubbon Park, Lal Bagh Botanical
Gardens, Vidhaan Soudha, Bangalore Palace, Iskcon Temple, Big
Bull Temple, National Gallery of Modern Art, Ulsoor Lake, and
Butterfly Park are some of the sightseeing places in Bangalore.

Bangalore is considered as the third largest city in India and


gaining popularity as the most livable city in India. The only flaw
is the traffic that never lets you be on time so always start a little
early in Bangalore.

While you are in the city, you can explore the nearby attractions
in Bangalore like Ooty, Mysore, Coorg etc and do a combined
tour of these blissful locations.

Bangalore can serve the best base to roam around the state of
Karnataka and spend some beautiful time your life.

Lal Bagh Botanical Garden

Lal Bagh Botanical Garden is spread over an area of 240 acres


exhibiting more than 1,854 species of medicinal and scientific
plants and trees. Among the places to visit in Bangalore, Lal Bagh
Botanical garden certainly tops the list for its vast green stretch
and the presence of exotic birds.
The park was commissioned and concluded by Hyder Ali and his
son Tipu Sultan, respectively, in the year 1760 and this vast
expanse of greenery houses a 3000 million years rock which is
fondly famous as “the Lal Bagh rock” which is a unique site that
interests hordes of tourists.

There is also a glass house with a lake and an aquarium and this
glass house hosts a vibrant annual flower show. The colorful and
vivid presence of birds such as Parakeets, Myna, Brahminy Kite,
Pond Heron, Purple Moorhen and Common Egret etc hook a lot
of birdwatchers and photographers.

Nandi Hills

This is a set of breathtaking hillocks which is a complete nature


retreat. From cycling and paragliding into the stunning mount to
the Yoganandeeshwara Temple that sits atop the hill with a huge
Nandi statue, these small mounds have a lot to offer, even the
name of the hills was coined after the temple statue.

Nandi hills are set small hillocks which serves as a great trekking
or weekend getaway from Bangalore. It bestows the visitors with
the sight of some endemic flora and fauna and magnificent vistas
of the surrounding.
Trek through the paved roads, rocky terrain, small streams and
grasslands to reach the top of the hills but one must be careful of
the steep descent and sharp turns while returning. Hordes of
monkeys will accompany you throughout the trek hence do not
keep eatables in your hands.

Bangalore Palace

Bangalore Palace is a true example of sheer architectural beauty


which was built in 1873. This old opulent structure sits on a land
of 25000 square feet displaying the regal mix of Tudor and
Scottish Gothic architectural designs.

Besides being a preserved site, it is also a grand venue that hosts


marriage parties, events, and rock concerts. The palace houses
paintings of the famous painter of bygone era Raja Ravi Varma
along with ancient carvings and granite and ceramic tiles seating
on the floor which are still unblemished.

There is magnanimous ground in front of the palace which has


hosted a number of international artists in the past like, The
Rolling Stones, Backstreet Boys, Elton John, Lamb of God, Don
Moen, David Guetta, The Black Eyed Peas, Deep Purple,
Metallica, Roger Waters etc.
On the auspicious day of Dussehra every year, a grand fair is
organized in the ground against the royal backdrop of the
beautifully lit palace.

Vidhana Soudha

Vidhana Soudha is situated in the center of the city, painted in


white and spread over an area of 60 acres. Vidhan Soudha is the
most renowned landmark in Bangalore which houses the state
secretariat and state legislature under one roof. This dome-like
structure has two chambers where the first floor (central wing)
can accommodate 268 members at a time and the southern wing
can accommodate 88 members.

The building is a marvelous amalgamation of Dravidian, British


and Indo-Islamic style architecture. One must not miss the
lighting up of the building on Sunday evenings and the inscription
that reads “Government work is God‟s work.”

Please note that it is one of the sightseeing places in Bangalore


that needs prior permission or a pass nowadays. The grandeur of
Vidhana. Soudha is visible after sunset when the entire building is
well lit and it resembles a grand palace
Venkatapa Art Gallery

This enormous art gallery is segmented into two halls where it


exhibits more than 600 paintings.

One of the two halls displays stone sculptures associated with


Khajarao School of Art and Mathura whereas the other hall
exhibits pottery and clay articles dating back to the Indus Valley
civilization.

This art gallery houses the artwork and paintings of world famous
and renowned artists such as K. Venkatappa, M. F. Hussain,
Hanumaiah, Hariram, Yusuf Arakkal, Rekha Rao, N. S. Bendre,
and Vasudev in galore on the first level of the building.

There are paintings christened as Prithvi, Vayu, Jala, Agni, Death,


Sea Shore, Nagamandala, In Space, and Last Glimpse by K.K
Hebbar on the second level of the gallery.

Venkatappa Art gallery is the Mecca for art loves, magnanimous,


loaded and authentic and is one of the aesthetically pleasing
places to visit in Bangalore.
METHODS OF PAYMENT :

CASH: Cash sterling is the best method for the hotel. Since the

cash is intently available for use. If in large amount, if can cause

banking difficulties and security problem. Coins are heavy and

bulky.

THE CHEQUE: It should be signed by the guest in front of the

receptionist. The cheques card should be signed by the guest in

front of the receptionist cheque card should valid by date and

signature. Cheques take three days to clean through the bank, thus

depriving the hotel of its monitory value until it has been cleared.

CREDIT CARD: It means banks credit card are available to

bank costumers the card is used to purchase goods or to pay for

service. A sales voucher is signed for the total amount of the bill.

The bank then undertaken to debit the hotel‟s bank account with

amount of money paid by the credit card. Minus a small

commission charge is called as credit card.


TRAVEL AGENT VOUCHER: It means vouchers means travel

agent issues a voucher to guest upon receipt of the cost of their

intended stay a visit. The credit worthiness of the travel agent

need to be checked before the hotel accepts the booking form

from the travel agents.

FOREIGN CURRENCY: It means some large hotel will offer

guest facilities to exchange their foreign currency for sterling

currency. However the rate will manually be slightly lower than

that available at a bank, to cover the hotel handling charges.


FOOD AND BEVERAGE SERVICE -

Within food and beverage operations there are two main

systems operating and being managed. These are the food

production process and the food service process. These can be

seen as two distinct systems (cousin, 1988).

One of the key differences between the management of food

and production and the management of food beverage service is

that as the volume of business increases, it requires fundamental

alterations in the food production process, whereas the service

process may simply be multiplied (cousins, 1988). As the volume

of food production increases, the way in which the production is

organized has to change. This change can be either where basis of

the “Partie” system or where the production system‟s based on

the type of process being used for food service, as the volume

increases additional service is provided through, for instance,

increasing the number of station in a restaurant.

MY LEARNING EXPERIENCE

Introduction

The Industrial Exposure Program at The Lalit Ashok, Bangalore

was a great experience for me. The kind of exposure and

knowledge I have acquired cannot be forgotten. I am sure that I

have used this opportunity to the fullest and my working

experience record is a hundred per cent genuine piece.

Food and Beverage Production

I was introduced to the Garde Manger (Cold Kitchen). Actual

working of the kitchen is far different from that of the working in

the college, there‟s a lot of stress and hard-work involved. The

urgency and need of finishing a given task on time is the real

challenge. I was trained in the garde manger department under the

Demi Chef De Partie Mr Prashant Kumar. I was initially asked to

do minimal chores such as mise-in-place preparations for all sorts

of dishes prepared. Later on, I was asked to prepare a la carte

orders, roasting preparations, breakfast buffet preparations and


setting up, salad counter closing etc. I enjoyed my time in the

kitchen.

Food and Beverage Service

I was sent to the Banquets department after my training at the

kitchen. The service department staffs were all really friendly and

supportive. They guided me in every aspect. The Banquet

department was managed by Mr Vikas Sharma, the Banquet

Manager. The time which I spent in the service department was

hectic. The hotel had committed to a lot of functions during that

span of time. Events such as Christmas, New Year, Valentines‟

Day, Aditya Birla Fashion Exhibition, Pleasure Dome by Kitty

Ko, BNI Ultimate etc. All the events had a minimum expectancy

of 1500 pax. The lack of staffs in the hotel was a major problem

to be sorted. Due to the frequent program schedule I had to stay in

the service department for an extended period.


Front Office

After my training in the service department I was shifted to Front

Office. I was expected to be a part of the bell desk team. The

Senior Bell Boy Mr Manjunath was the person I had to report to.

The working hours were shortened to a 9 hour shift. The only

work to be done was greeting the guest, escorting them to the

reception, luggage assistance and then later on escorting the guest

to the rooms. First few days I was assigned in the morning shift

and then I was changed to Night Shift duty. This was the turning

point for me. The Executive on duty Mr Anirudhha Singh

Bhandari turned out to be of great influence on the days that

followed. He guided me regarding the working of the front office

in detail. Initially, he had taught me how to properly carry out a

cash audit. Later on, I was exposed more to the working of

Micros, Night Audit Process, Key Creation, Reports, Profile

Updating, C-Form Updating etc. He also told me that the work

done in front office should always be maintained in accurate and

neat way. Any mistake from the staff‟s side can sum up to a

major issue. Soft Skills and Communication skills are mainly


required to prevail in the front office department. The exposure I

have received in Front Office department cannot be replaced.


CONCLUSION

Needless to say that this experience was highly enriching and

educative one as I went on from one department to another and

met and got the opportunity to train under highly respected senior

professionals. I learnt that everyone has something unique to

offer. I learnt that every job has its nuances and its values and that

no job is superior to the other. I learnt that this is the beginning of

the long road ahead i.e. full of challenges. But I know that I will

be able to run along because I have my foundation firmly built in.

I thank all the people who have helped me in several different

ways that will go along in facilitating the commencement of a

wonderful journey.
