Introduction
Coffee is a brewed drink prepared from roasted coffee beans .Coffee plants are cultivated in
over 70 countries, primarily in the equatorial regions of the America, Southeast Asia, Indian
subcontinent, and Africa.
Coffee is dark colored, bitter, slightly acidic and has a stimulating effect in humans, primarily
due to its caffeine content. It is one of the most popular drinks in the world, and it can be
prepared and presented in a variety of ways (e.g., espresso, French press, café latte).
Health problems
Coffee contains the drug caffeine. Caffeine is a mild stimulant which helps to
keep people awake. Caffeine, like many drugs, can be addictive and can cause
health problems.
Component Concentration(g/100 g)
Caffeine
Caffeine is a central nervous system (CNS) stimulant of the methylxanthine
class. It is the world's most widely consumed psychoactive drug.Caffeine is a
bitter, white crystalline purine, a methylxanthine alkaloid, and is chemically
related to the adenine and guanine bases of deoxyribonucleic acid (DNA) and
ribonucleic acid (RNA). It is found in Coffee.

Chemicals Required
Experiment:
Samples of coffee was taken in a test tube. The change in color of Blue
litmus solution to red was noticed.
Observation:
The sample Turned the color of blue litmus to red.
Inference:
Coffee is acidic because of the presence of the Quinic Acid.
Experiment:
Sample of coffee was taken in a test tube and Cerric
Ammonium nitrate is added.
Observation:
Wine red coloration is produced.
Inference:
Coffee gave positive test for alcohol. Hence coffee contains
alcohol.
Experiment:
1.Sample of coffee was taken in a test tube and Equal volumes
of Fehling solution A and B is added and the solution is
boiled.
2. To the coffee sample Tollen’s reagent is added and the
solution is heated.
Observation:
1. Brick Red ppt. is produced in Fehling
Solution Test.
2. Shining Silver Mirror appears on the
walls of test tube.
Inference:
Aldehydic group is present.
Experiment:
1.Sample of coffee was taken in a test tube and Equal volumes
of Fehling solution A and B is added and the solution is
heated for 2 minutes.
2. To the coffee sample Tollen’s reagent is added and the
solution is heated by keeping on a water bath.
Observation:
2. Brick Red ppt. is not produced in Fehling Solution Test.
3. Shining Silver Mirror does not
appear on the walls of test tube.
Inference:
Ketonic group is present.
