This document contains three graphs that show bacterial survival curves at different temperatures over time. Each graph plots the natural log of the number of surviving bacteria (log N) against time in minutes (t). The 240°F curve can be modeled by an exponential decay function with a rate constant of 0.331 min^-1. The 245°F and 250°F curves also follow exponential decay patterns with increasing rate constants as temperature rises. A fourth graph plots the decimal reduction time (D value) against temperature and fits a linear trendline, showing how D decreases with increasing temperature.
