Zabaglione with Fresh Strawberries

Serves 6, 20 minutes

Ingredients
8 egg yokes
½ c sugar
1 c dry Marsala
Fresh strawberries, to serve

Preparation
Add the egg yokes and sugar to a large stainless steel bowl. Beat until the mixture is thick,
pale yellow, and the sugar is completely dissolved. Add the Marsala, then continue to beat
until the mixture is well combined.
Set the bowl over a pot of simmering water, making sure the bottom of the bowl is not
touching the water. Beat the mixture until it is light and fluffy, about four to six minutes.
Divide the strawberries among your desired serving glasses, then pour the zabaglione over
them (you can serve it hot or allow it to cool), and serve.
