Boiler Sizing Guide PDF

This document provides guidelines for sizing steam boilers used for direct steam equipment. It states that 1 boiler horsepower (BHP) produces approximately 34.5 pounds of steam per hour and lists steam output rates for common Blodgett convection steamers and steam kettles. Tables show the steam flow rates in pounds per hour for Blodgett steam boilers at various energy inputs and for direct steam kettles in different size ranges when cooking at medium heat. An example sizing calculation is given for a 40-gallon kettle and 6-pan steamer requiring a total of 122 pounds of steam per hour or a 3.54 BHP boiler.

STEAM BOILER SIZING GUIDE

Use this guide when calculating the correct size boiler you will need to power direct steam equipment.
1 Boiler Horsepower (BHP) = Approximately 33, 475 BTU
1 Boiler Horsepower (BHP) = Approximately 10 kW
1 Boiler Horsepower (BHP) = Approximately 34.5 LBS./Hour of steam
Actual steam output depends upon boiler efficiency.

As a general rule:
Blodgett Convection Steamers - require 34.5 LBS./hour of steam at start-up & operation or each steamer requires
approximately 3/4 BHP per compartment
Blodgett Steam Kettles - require approximately 1 BHP per 20 gallons to operate at medium heat. Example - 40
Gals = 2 BHP

200,000 BTU 111 3.7
24 kW 68 2.2
36 kW 104 3.5
48 kW 141 4.7

SIZING EXAMPLE
Quantity (1) 40 Gallon Direct Steam Kettle (Cooking on medium heat) 70 LBS./HR
Quantity (1) 6-Pan Convection Steamer (25.9 LBS./HR x 2 Compartments) 52 LBS./HR

Total Requirement: 122 LBS./HR

122/34.5 LBS./HR = 3.54 BHP - select boiler accordingly
