Ingredients:
• 4 Diced tomatoes
• 2 Bowls of boiled pasta
• 1 Sliced onion
• 3 tbsp Grated cheese
• Salt and pepper to taste
• 2 Green chilies
• 1 tbsp Butter

How to make Tomato Pasta:


• Melt butter in a pan and fry
onions for a minute.
• Add chillies and tomatoes. Fry
again for one minute.
• Add boiled pasta, pepper and
salt.
• Cook the mixture for 2 minutes
and remove in a micro safe
bowl.
• Spread grated cheese over it
and microwave for 30 seconds.
• Tomato Pasta is ready.

Ingredients:

2 cups semolina (sooji, rava)


1/2 cup rice (chawal) flour
1/2 cup buttermilk
1/4 tsp asafoetida
salt (namak) to taste
1 inch ginger (adrak)
4 green chillies
10-12 curry leaves (kari patta)
1/4 cup coconut (narial) (scraped)
12 cashewnuts
2 tblsp peppercorns
1 tsp cumin seeds
2 tblsp vegetable fat (ghee)
refined oil (tel) to fry

How to make rava dosai:

• Blend rava, rice flour and buttermilk to make a thin batter, add asafoetida and required salt. Stand the
batter for at least 6 hours.

• Wash and finely chop the ginger, green chillies and curry leaves. Chop the coconut and cashew nut
into very small bits.

• Crush the peppercorns and cumin seeds. Heat the ghee and roast peppercorn and cumin seeds in it
and add to the batter.

• Mix the chopped greens, coconut and cashew into the batter. Stir well.

• Grease a non-stick tawa, smear little oil. Pour a ladle full of the batter and spread by swirling the tava.

• Pour a tablespoon oil around and on the dosa.

• Cook till it is crisp and golden in color. Remove and serve hot.

IDLI RECIPE

Ingredients:

2 cups Rice
1 cup Urad Daal (white)
1 1/2 tblsp Salt
A pinch of Baking Soda
Oil for greasing
How to make idli sambhar:

• Pick, wash and soak the daal overnight or for 8 hours.

• Pick, wash and drain the rice. Grind it coarsely in a blender.

• Grind the daal into a smooth and forthy paste.

• Now mix the grinded rice and daal together into a batter.

• Mix salt and set aside in a warm place for 8-9 hours or overnight for fermenting.

• Idlis are ready to be cooked when the batter is well fermented.

• Grease the idle holder or pan well and fill each of thm with 3/4th full of batter.

• Steam cook idlis on medium flame for about 10 minutes or until done.

• Use a butter knife to remove the idlis.

• Serve them with sambhar or chutney.

Ingredients:
• 2-1/2 cup Uncooked Rice
• 1 cup Urad dal (whole)
• 2 tsp Fenugreek Seeds
• Salt to taste
• 2 tbsp Oil for cooking

For Masala:
• 3 Boiled potatoes (peeled and chopped)
• 1 Onion (chopped)
• 2 Chillies (chopped)
• 1 tsp Tumeric Powder
• 1 tsp Chana dal
• 1/2 tsp Mustard seeds
• Salt to taste

How to make Masala Dosa:


• Wash and soak urad dal, long grain rice
and fenugreek seeds separately for at least
6 hours in water.
• Now grind them together by adding
requisite amount of water to make a fine
paste.
• Add salt and set the mixture aside for
fermentation for a day.
• Saute onions, mustard seeds, chana dal
and chilli in a pan with oil.
• Add chopped potatoes, tumeric and salt
and stir continuously.
• Cook it for a few minutes.
• Pour a ladle of the batter on a non-stick
pan and give it a circular shape.
• Drop little oil around it and turn over when
bubbling appears.
• Fill in the center of dosa with a spoonful of
masala and fold it.
• Masala dosa is ready.
• Serve it hot with sambhar and freshly
prepared coconut chutney.

Ingredients:

* Vegetable Steaks - 4 (or) any other vegetable cutlet of your choice


* Tomato ketchup- 2 tsp
* Sliced buns- 4
* Onion-1 (cut into thin round slices)
* Tomato- 1 (cut into thin round slices)
* Carrot- 1 (cut into thin round slices)
* Cabbage leaves- 4
* Turmeric powder- 1/4 spoon
* Salt
* Butter- 2 tsp
* Dalda- 2 tsp

Method:
Boil water in a pan add turmeric & salt to it. Turn off the heat. Put the
cabbage leaves & carrots in that hot water and leave it for 10 minutes. Then
take the vegetables from the water and drain on paper towels.

Heat dalda in a pan and toast the buns. Then apply butter & little ketchup to
the inner sides of the buns. Keep 1 cabbage leaf, 1 tomato slice, 1 steak (or)
cutlet, 1 onion slice, 1 carrot slice in between two slices of a bun. Prepare
all the buns in the same manner.

Ingredients:
• 2 Large potatoes
• 1/2 Cup boiled green peas
• 1/2 Capsicums
• 2 Large chopped onions
• 1 Large chopped tomato
• 2 tbsps garlic
• 5 tbsps butter
• Salt to taste
• 4 Paavs

How to make Paav Bhaji:


• Cut all the vegetables into small
pieces.
• Fry onions in melted butter.
• Add vegetables and garlic and mix it
well.
• Cook it till it turns tender.
• Add butter and cook it for 5
minutes.
• Place the Paavs on heated tawa and
add spread butter on it.
• Cook it till it turns brown.
• Hot Pao Bhaji is ready.

• 3 Carrots (sliced)
• 1 Beans (diced)
• 1 Cabbage (shredded)
• 1 Broccoli (diced)
• 2 Mushrooms (diced)
• 1 Onions (diced)
• 2 pods Garlic (diced)
• 2 tbsp Wheat Flour
• ¼ cup Cheese

• Oil for frying

How to make Veggie Burger:


• Heat oil in a pan, and add
mushrooms, onions and garlic to it.
• Sauté for 3-5 minutes; add flour,
salt, pepper, cheese and the
remaining vegetables to the above.
Mix well.
• Turnoff the flame and allow it to
cool
• Shape the above-made mixture into
patties of equal sizes and
refrigerate for at least an hour.
• After the due time, heat some oil in
a pan and fry the patties on both
sides until they turn brown on both
the sides.
• Insert any filling like ketchup,
cheese, etc, between two patties.
• Veggie Burger is ready to eat.
Serve hot.

Ingredients:
• For Making Rolls:
• 1/2 Cup maida (all purpose flour)
• 1 Cup milk
• A pinch Soda-bi-carb
• Oil for deep frying
• 1/4 tsp Salt

For Stuffing:
• 7-8 French beans, half boiled
• 1 Onion, finely chopped
• 1/2 Cup cabbage, cut into thin and
long strips
• 1/2 Capsicum, cut into thin and long
strips
• 1/2 Carrot, cut into thin and long
strips
• 1/2 tsp Sugar
• 1/2 tsp White Pepper
• 1 tbsp Oil
• 2 tsp Soya sauce
• 1 tsp Corn-flour
• Salt as required
• A pinch ajinomoto

How to make Indian Spring


Rolls:
• Cut the sides of the beans and put
them in boiled and salted water for
about one minute.
• Now Strain it through a strainer.
• Cut it along with all the other
vegetables into thin and long pieces
• Take a pan and heat oil in it.
• Add chopped onions and fry for
about 1 minute.
• Add sugar, ajinomoto, salt, white
pepper, all the vegetables and cook
for about 1 minute.
• Combine soya sauce with it, mix
well.
• Take a bowl and add salt to maida,
milk, along with soda-bi-carb to
make a fine batter for pancakes.
• Heat a nonstick pan and put half of
the paste onto the pan and stir the
pan so the paste spreads equally on
the pan.
• When the bottom of the pancake is
cooked, remove it from the pan and
set aside on a dry cloth, not to cook
the top portion of the pancake.
• Make the second pancake with the
remaining paste in the same way.
• Place half the stuffing on the cooked
side of each pancake and fold both
the sides onto the stuffing.
• Now hold the sides and turn
upward.
• Combine corn flour with 1 tsp water
and cover the sides with the corn-
flour paste.
• Heat oil in a pan and fry spring rolls
on both the sides until it becomes
golden brown.
• Put them on a tissue paper and cut
them into 1 inch pieces.
Ingredients:
• 2 cups Raw Rice
• 1 cup Urad Dal
• Salt to taste
• 1 tbsp Oil for greasing
• Water to mix
• A pinch of Baking Soda

How to make Idli:


• Soak urad dal and rice separately in
water, for about 5 hours.
• After due time, grind the soaked
ingredients in a mixer to make a
smooth paste.
• Now leave the paste aside, for about
8 hours.
• Afterward add salt and baking soda
to the paste. Mix well.
• Pour the mixture gradually into the
greased cavities of an Idli Stand.
• Expose Idli Stand to steam for a few
minutes in a cooker or closed vessel.
• Then, carefully take out the stand
and remove the the idlis, using a
spoon.
• Repeat the procedure for the
remaining mixture.
• Idlis are ready. Serve them in pairs
with coconut chutney and sambhar.

Ingredients:
• 1 cup Toovar Dal
• 1/ 4 cup Coconut (grated)
• 3 Red chilies
• 1 Green Pepper (cut into pieces)
• 1 Onion (chopped)
• 1 Tomato (chopped)
• 1 tsp Mustard Seeds
• 1 tsp Tamarind Paste
• 1 Pinch hing
• 2 tsp Channa dal
• 3 tsp Dhania seeds
• Pinch of turmeric Powder
• Coriander leaves
• 3 tsp Salt

How to make Sambar:


• Wash toovar dal and boil it with 3
cups of water.
• Fry chana dal, hing, dhania seeds
and red chilies for few minutes.
• Add grated coconut and fry again.
• Grind the mixture with sufficient
water.
• Heat oil in a frying pan and fry green
peppers.
• Boil vegetables, tomatoes, tamarind
paste, turmeric and salt in water.
• Add to it the mixture of third step
and cook again for 5 minutes.
• Add boiled dal to it and again boil it.
• Meanwhile fry the mustard seeds and
onions.
• Add the above contents along with
coriander leaves to the mixture and
mix well.
• Sambar is ready to serve.
