Ingredients:
Cup Butter
1/3 Cup Sugar
1/3 Cup Firmly-packed Brown Sugar
1 piece Egg
1 teaspoon Vanilla
1 Cup + 2 Tablespoon All-Purpose Flour
teaspoon Baking Soda
teaspoon Iodized Salt
1 Cup Chocolate Chips
1 Cup Chopped Cashew Nuts
Procedure:
1. Pre-heat oven to 350F. Grease 2 baking sheets. Set aside.
2. Cream butter until soft and fluffy.
3. Add sugars and continue beating until smooth.
4. Blend in egg and vanilla.
5. Sift dry ingredients together and add to the creamed mixture. Stir
in chocolate chips and nuts.
6. Drop by teaspoons on baking sheets about 2 inches apart.
7. Bake just until edges are brown.
8. Yield: About 2-3 dozens.
BLONDIES
Adding White Chocolate Chips plus Semi-Sweet Chocolate Chips give
this Blondies a rich, full flavor.
Ingredient:
1 Cups (7 ounces) All-Purpose Flour
1 teaspoon Baking Powder
teaspoon Iodized Salt
1 Cups Packed (10 ounces) Light Brown Sugar
12 Tablespoons Unsalted Butter, Melted and Cooled
2 pieces Large Eggs
1 teaspoons Vanilla Extract
1 Cup Pecans, toasted and chopped coarsely
Cup (3 ounces) Semi-Sweet Chocolate Chips
Cup (3 ounces) White Chocolate Chips
Procedures:
1. Adjust oven rack to middle position and heat oven to 350 degrees
Fahrenheit. Make foil sling for 13x9 inch baking pan (or simply use
parchment paper). Spray with non-stick baking spray or grease
with butter.
2. Whisk Flour, Baking Powder and Salt together in a bowl. In
medium bowl, whisk Sugar and Melted Butter together until
combined. Whisk in Eggs and Vanilla. Using rubber spatula, fold in
Flour Mixture until just combined. Fold in Pecans and Semi-Sweet
and White Chocolate Chips.
3. Scrape batter into prepared pan and smooth top. Bake until top is
shiny and cracked and feels firm to touch, for 22 to 25 minutes,
rotating the pan halfway through baking.
4. Let Blondies cool completely, for about 2 hours. Using foil
overhang or parchment overhang, lift blondies from pan. Cut into
bars and serve.
BUTTERSCOTCH BARS
Ingredients:
2 pieces Eggs
2 Cups Brown Sugar
1 teaspoon Vanilla Extract
Cup Margarine, melted
1 Tablespoon Corn Syrup
1 Cups All-Purpose Flour
2 teaspoons Baking Powder
teaspoon Iodized Salt
1 Cup Chopped Cashew Nuts
Procedure:
1. Pre-heat oven to 350F. Grease a 13 x 9 x 1-inch rectangular pan.
Set aside.
2. Beat Eggs until foamy. Add in Sugar, Vanilla, Margarine and Corn
Syrup. Beat until creamy.
3. Combine the Flour, Baking Powder and Salt. Add to the Egg
mixture. Blend well.
4. Stir in Nuts. Spread batter on prepared pan.
5. Bake for 25 to 30 minutes or until top is light brown. Cut into bars
while hot.
6. Yield: About 24 30 pieces.
SIMPLE BROWNIES
Ingredients:
Cup Butter or Margarine, softened
1 Cup Sugar
2 pieces Eggs
2 Cups All-Purpose Flour
teaspoon Baking Soda
teaspoon Iodized Salt
Cup Cocoa Powder
1 teaspoon Vanilla Extract
1/3 Cup Water
Cups Chopped Cashew Nuts
Procedure:
1. Pre-heat oven to 350F. Grease and line a 9-inchsquare pan. Set
aside.
2. In a bowl, cream Butter and Sugar until fluffy. Add the Eggs one at
a time, while beating continuously. Add the rest of the ingredients
except half of the nuts. Mix thoroughly.
3. Pour into prepared pan. Spread evenly. Sprinkle remaining nuts on
top.
4. Bake for 25 to 30 minutes. Cool then cut into squares.
5. Yield: 16 squares.
FOOD FOR THE GODS
Ingredients:
1 Cups Sifted All-Purpose Flour
teaspoon Baking Powder
teaspoon Baking Soda
teaspoon Iodized Salt
1 Cup Coarsely-Chopped Pitted Dates (or use Raisins)
1 Cup Butter
1 Cup Granulated Sugar
1 Cup Brown Sugar
3 pieces Eggs
1 Cup Walnuts, Chopped (or use Peanuts)
Procedure:
1. Pre-heat oven to 375F. Grease and line a 13 x 9 x 2-inch
rectangular pan. Set aside.
2. Sift Flour, Baking Powder, Baking Soda, and Salt together.
3. Take Cup of this mixture and Dredge Dates (or Raisins). Set
aside.
4. Cream Butter until soft and fluffy. Add Granulated Sugar and
Brown Sugar blend well. Add Eggs one at a time beating well after
each addition.
5. Fold-in the Flour Mixture and Dates (or Raisins) into the prepare
Creamed Mixture. Add Walnuts (or Peanuts), and stir to completely
blend the batter.
6. Pour batter into prepared pan and bake in a pre-heated oven for
10 minutes. Lower heat to 300F and continue baking for 30 to 40
minutes longer.
7. Cool slightly and then cut into bars. Individually wrap with
cellophane or colored foil.
8. Serves: About 36.
