Cut fish fillet into diamond shape with 2 pieces only.


Take out sweet lime juice and keep some part of sweet lime for garnish.
Marinate fish with salt, white pepper, lemon juice and sweet lime juice for 15 minutes.
Cut carrot into chateaux shape and boil and store.
Put the marinated fish with the marination liquor into oven and cook for 8 minutes,
turning it time to time.
Remove the fish from the oven, take the juice in a pan and add some butter and cook to
reduce and to get a saucy texture.
Place fish on a serving plate, decorate with fresh sweet lime slices and coat with sauce.
On a separate pan toss the carrot with butter and place those on the plate to make the
Dish complete.
