ORIGIN A staple of Italian-American cuisine Originating in 19th century Probably had its origin in several baked Neapolitan pasta dishes served at religious festivals such as Carnival and Christmas. It is considered obsolete in early 21st century southern Italy.

ORIGIN Food historians agree that the pasta we know today as spaghetti is a relatively new invention Late 19th and early 20th century American cook books often refer to recipes for spaghetti and meat sauce as Neapolitan spaghetti Recipes for spaghetti and meatballs begin to show up in American cookbooks during World War II

Preparation time: 10 minutes Cooking time: 45 minutes
INGREDIENTS 450g Spaghetti Red Onion, Chopped 1 Garlic Cloves 1 Sprig each Rosemary & Thyme 900g Ground Beef (85% Lean) 100g Bread Crumbs 180ml Milk

Salt & Pepper 45ml Olive Oil 1kg Good Quality Canned Tomatoes 2 tsp Tomato Paste 1 tbsp Sugar 160ml Beef Stock 20 Fresh Basil Leaves

PROCEDURE
1. Boil water

2.Chop onions and garlic

3. Chop the rosemary and thyme leaves

4. Combine the breadcrumbs and milk in a small bowl

5. Combine the onion, garlic, rosemary and thyme mixture with the soaked breadcrumbs, salt, pepper and the minced meat in a large bowl

6. Using your hands grab a small piece of mince at a time and form small meatballs

7. Place a deep frying pan on a medium heat and add the olive oil.

8. Put in a frying pan the remaining sliced onions and the other half of the garlic and saut lightly for 2 minutes

9. Add the chopped tomatoes to the frying pan and mix together

10. Blend the tomato mixture together adding a little bit of sugar, tomato puree and some fresh beef stock

11. Return the sauce to the pan and carefully place the meatballs into the sauce and place on a low heat to simmer for a further 20 minutes

12. Add the pasta to the rapidly boiling water and stir every 3 minutes

13. When the pasta is cooked strain and serve family style tossed with olive oil in a large bowl

14. Shred some basil leaves into the tomato sauce and spoon the meatballs and sauce over the pasta. It is ready!!!
