Ingredients for Chat masala Coriander seeds, 4 Tbsp Cumin seeds, 2 Tbsp Carom seeds (ajwain), 1 tsp Red

Preparation of Chat Masala


1. Spray oil in a non-stick frying pan and roast coriander seeds, cumin, and carom seeds separately till they turn aromatic. 2. Mix all the ingredients and grind into a fine powder using a grinder. 3. Store chat masala in a air-tight bottle and useit when required.

Ingredients 2 tbsp. cumin seeds 2 tbsp. whole, dry red chillies 2 tbsp. coriander seeds 1 tbsp. black pepper, whole or ground. Whole gives better flavour. 2 tbsp. black salt or kala-namak. If you can't get it, use rock salt or ordinary salt 1 tbsp. ordinary table salt 1/2 tsp. citric acid powder 1 tbsp. dry mango powder/amchoor or anardana/dry pomegranate seed powder 1 tbsp. ginger powder 1 tbsp. Garam Masala 1/2 tsp. hing or hing or asafoetida powder, dry roasted on a girdle for a few minutes

1. Dry roast cumin seeds on a girdle or tava until browned and an aroma rises. You will know when you smell it! Keep aside 2. Lightly roast coriander seeds and keep aside. 3. Lightly roast red chillies and keep aside. Chillies burn very quickly, so be careful! 4. Place all ingredients in a grinder and grind to a powder. 5. Keep in an airtight jar.
Ingredients:

1 tbsp Cumin Seed (Jeera) 1/2 tblsp dried Mint Leaves (Pudina Leaves) 1/4th tsp Carom (Ajwain) seeds 1/4th tsp Asafetida (Hing) Powder 1 tbsp Rock Salt (Kala Namak) 21/2 tblsp dried Mango (Aam) Powder 5 Cloves (Lavang) 1 tsp Ginger (Adrak) Powder 1 tsp Cayenne 1/4 tsp Tartaric Acid 1 tblsp Black Pepper corns (Kalimirchi) 2 tsp Salt (Namak)

Put cumin seeds, black peppercorns, cloves, dried mint leaves, ajwain and asafetida powder in a pan and heat gently,
shaking the pan from time to l the spices began to smell fragrant.

Remove from heat add rock salt and grind while still warm.

1 cup slightly roasted coriander (dhania) seeds 1 cup whole dry kashmiri red chillies , roasted 1 cup roasted cumin seeds (jeera) 1 cup dried mango powder (amchur) 3 tbsp black peppercorns (kalimirch) 1 cup salt 3 tbsp black salt (sanchal)

1. 2. 3. Combine all the ingredients and blend in a mixer to a fine powder. Store in an air-tight container. Use as required.
