Remi Joffray's weekly report as a garde manager summarizes their production of creme brulee. Todays Production:

% Crème brulee
 
Standard of cooking:

Procedure:

-Preheat oven to 300 degrees F

-combine ingredients

- put in ramikins and in water bath

- bake

- burn sugar on top

Outcome & Critique:

great taste. 

What should I have done differently?

The sugar on top needs to be better distributed.

Reflections on learning:

Almost everyone serves crème brulee’s and it again another great useful thing to
master in a sense. Pretty basic.
