Winemakers can come from a long lineage of family like the Mondavis or the Gallos, but the path to winemaking for Eric Ross owner Eric Luse was via photography. Following his years as a Navy photographer during the Viet Nam War era, Luse returned home and enrolled in San Jose State originally seeking a degree in law but detouring toward journalism and photojournalism in particular. After working for a couple of different newspapers, he landed at the San Francisco Chronicle in 1980. The Chronicle has a great food and wine section, and I would get assigned to come up to wine country and shoot various winemakers for feature stories, Luse recalls. I kept pulling wine country assignments and eventually got to know some of the more cutting-edge growers and winemakers. The bug bit and Luse enrolled in Enology classes first at U.C. Davis and then viticulture at Santa Rosa Junior College, with the total support of the Chronicle. What really put him over the edge was when one of his winegrower friends said to him, Theres a quarter ton of grapes and a stemmer-crusher. Go make some wine! And he did. Before long his career in photography became a hobby while his hobby of learning the wine business became his career.

Lamb Stew with Roasted Winter Vegetables paired with Dutton Estate 2008 Manzana Pinot Noir
A good wintery stew recipe is a necessity at this time of year but when paired with Pinot Noir, who can resist a hearty and extravagant mid-week meal? This lamb stew recipe is from Cynthia Newcomb, Winery Chef at Dutton Estate Winery, who says, I wanted to pair the 2008 Manzana Vineyard Pinot Noir with a recipe that would show off the richness and impeccable acidity of the wine. Im a big proponent of local and seasonally appropriate foods, and a rich stew of California lamb and roasted winter vegetables filled the bill. I decided to roast the vegetables instead of cooking them in the stock in order to concentrate their flavors and allow them to retain their integrity in the finished stew. The stew is a beautiful medley of the lamb and individual vegetables. I made this recipe the day before just like the recipe stated and the flavors were delicious. As with most stews I serve for dinner, I made Yorkshire puddings on the side because everyone likes some sort of bread for dipping. The 2008 Manzana Pinot Noir has wonderful scents of fruity plum and strawberry which complement this lamb stew beautifully. The wine has exquisite texture with silky long tannins and a bold luscious mouth feel. I usually save Pinot Noir for my Sunday dinners but this pairing makes me rethink the mid-week meal. After all, isnt that one of the benefits of finding a great wine? Dutton Estate Winery is located in the Russian River Valley near the town of Sebastopol. The winery was established in 1995 by Tracy and Joe Dutton and was named after the Dutton familys agricultural heritage of the historical apple growing region. Dutton Estate Winery produces vineyard designated Pinot Noir, Chardonnay, Syrah and Sauvignon Blanc from the familys estate vineyards at Dutton Ranch in the Green Valley and Russian River Valley. Collectively with winemaker Terry Adams the wines of Dutton Estate Winery and Sebastopol Vineyards reflect the individual characteristics of their estate vineyards and the efforts of a devoted winemaker and grape grower. Their tasting room is open daily from 10 a.m. to 5 p.m. Reservations arent needed and they offer a secluded picnic area so be sure to bring a basket and enjoy your time in Sebastopol.

6 fresh parsley sprigs 12 fresh thyme sprigs 2 fresh rosemary sprigs 2 bay leaves 10 whole black peppercorns 3 pounds boneless California lamb shoulder or leg, trimmed of excess fat cup olive oil 1 large onion, diced 4 garlic cloves, minced 1 1/2 cups dry white wine (unoaked) 3 1/2 cups beef stock or broth (or lamb stock made from roasted bones) Kosher salt Fresh ground pepper 1 small fennel bulb, stalks and core removed, cut small dice 1/2 pound parsnips, peeled, cut small dice 3/4 pound carrots, peeled, cut bite size 1 pound new potatoes, cut bite size 3 tablespoons Wondra flour (optional) Special equipment: cheesecloth, cotton string
PREPARATION
Wrap herb sprigs, bay leaves and peppercorns in a square of cheesecloth and tie into a bundle to make a bouquet garni. Pat lamb dry, then cut into 1 inch pieces and generously season with salt and pepper. Heat 2 tablespoons oil in a 6to 7-quart wide heavy pot over moderately high heat until hot but not smoking, then brown lamb in 3 batches, adding oil as necessary, turning occasionally, about 4 minutes per batch, transferring with a slotted spoon to a bowl. Add 2 more tablespoons oil to pot and saut chopped onion over moderately high heat, stirring, until onion is golden, about 6 minutes. Add garlic and cook 1 minute more, until fragrant. Add wine and stock and deglaze pot by boiling, scraping up brown bits, 1 minute. Return lamb to pot along with any juices that have accumulated in bowl and add bouquet garni. Braise lamb, covered, over low heat until tender, about 1 1/2 hours. While lamb is braising, toss fennel, turnips, carrots and potatoes with salt, pepper and olive oil. Spread on baking sheets and roast, stirring once or twice, until tender in 350 degree oven (45 minutes or more depending on size of pieces). Add roasted vegetables to stew and cook for additional 10 minutes to meld flavors. Discard bouquet garni. Thicken stew with Wondra flour, if desired. Stew is best made a day ahead of serving, then reheated.

Ancient Myths and Vineyard Light Photography Exhibit to Open at Mumm Napa
New Exhibit Runs March 10 - October 14 in Napa Valley
A new exhibit, opening March 10 at Mumm Napas Fine Art Photography Gallery, comes to life with a stunning exploration of photographs of ancient African myths and photographer Janis Miglavs vineyard-related work. The exhibit is titled Ancient Myths and Vineyard Light and will be open to the public at Mumm Napa winery in Rutherford through October 14. The African Myths and Vineyard Light photography exhibit will include color photographs of world-class vineyards and photo-illustrations that narrate some of Africas undiscovered myths. Miglavs fine art photographs show some of the worlds best vineyards in a visually stimulating way, with dramatic pops of color and intense lighting and shadows. Said to be the only person to have recorded such information, his photo-illustrations of African myths were inspired by his travels to African villages, where he learned of local legends and archetypal dreams from village shamans, witchdoctors and storytellers. Miglavs has been teaching and studying photography for many years and has continued to pursue his interest in wine professionally. His work will be available for purchase at the exhibit. The Ancient Myths and Vineyard Light exhibit opens with a sparkling wine reception at Mumm Napa on March 10 from 6:308:30 p.m. The reception and exhibit are open to the public. There is no charge to view the exhibit or attend the reception. Mumm Napa Winery is located at 8445 Silverado Trail, Rutherford. Chef Schraders Braised Lamb Shoulder with Cocoa and Ancho Chile paired with Judds Hill 2008 Napa Valley Cabernet Sauvignon
Oh, how I love the flavor combination of ancho chiles and cocoa! This is one that is used often in my house however never with lamb. This lamb recipe was developed by Chef Alejandra Schrader of Master Chef exclusively for Judds Hill to be paired with their 2008 Napa Valley Cabernet Sauvignon. It showcases her global cuisine point of view while complementing their full-bodied Cabernet. This pairing is simply delicious! The cayenne pepper on the lamb really set it apart from any other lamb meal I have ever tasted, while the pomegranate-Cabernet reduction was the yummy glaze that held the entire dish together. This recipe makes for a delicious and elegant meal that is perfect for Sunday dinner! This lamb dish calls out for a rich, bold, yet beautifully balanced wine and the 2008 Judds Hill Napa Valley Cabernet Sauvignon makes for a perfect pairing. This Cabernet is a blend of 80% Cabernet, 15% Cabernet Franc and 5% Merlot and only 456 cases were produced. This vintage opens with aromas of sweet cassis, sandalwood and eucalyptus with dark berry fruit. The tannins are soft with flavors of black berries and currants. Devin Joshua of Judds Hill Winery said, We make wines that are food friendly and approachable and not overly alcoholic or tannic but just well balanced. The vision is to make wines to drink while they are young but we hold back some to enhance their flavors. All of the full-bodied reds poured in our tasting room. Judds Hill is owned and operated by two generations of the Finkelstein family. While his parents Art and Bunnie founded the winery, Judd along with his wife Holly are still dedicated to making premium, handcrafted wines. Along the way, they have made and continue to make great friends. If you are looking for an interactive and hands-on experience, sign up for their Bottle Blending Day Camp. Youll spend about two hours working with a Blending Guide to blend your perfect Bordeaux-style cuve from four barrel samples (two Cabernet Sauvignons, one Merlot and one Cabernet Franc). BRAISED LAMB SHOULDER WITH COCOA AND ANCHO CHILE, PARSNIP RUTABAGA PUREE, BABY CARROTS AND CABERNET POMEGRANATE SAUCE
INGREDIENTS
Preheat the oven at 350 F Season lamb with cocoa powder, cayenne pepper, sea salt and pepper. Using a large ovenproof pot (I use my 11 chicken fryer it has a lid and its deep enough), heat 1 tablespoon of oil over high heat. Sear lamb on both sides, about 3-4 minutes each side; transfer to platter. Saut onions until translucent; add garlic, carrots, celery, bay leaves and saut until some of the vegetables begin to brown, around 6-8 minutes. Return lamb and any accumulated juices to the pot. Add ancho chile and stir in vegetable stock; bring mixture to boil. Cover pot tightly with a lid and transfer to oven. Bake until lamb is very tender for about 2 hours. Check pot after 1 hour and add additional stock or water, if necessary. Reserve some of the braising liquid for sauce. Keep pot warm until serving.
PUREE
2 lamb shoulder chops tsp cocoa powder Pinch cayenne pepper 1 small onion, roughly chopped 1 carrot, roughly chopped 2 stalks celery, roughly chopped 2 cloves garlic 3 bay leaves 1 dry chile ancho 1 cups reduced-sodium vegetable stock
PUREE
Set parsnip and rutabaga in large pot and cover with water by 1. Add garlic, chives, and season with sea salt and pepper; cover and bring water to a boil. Reduce the heat to medium-low, stir once and cover pot. Simmer for about 15 minutes, until roots are very tender. Drain. Transfer everything to food processor, drizzle with olive oil and add milk; process until smooth. If puree is too thick, add a little milk at a time until desired consistency is reached.
CARROTS
1 large parsnip, peeled and cubed (approx. 1) 1 large rutabaga, peeled and cubed (approx. 1) 2 cloves garlic, chopped 1 tbsp chives, roughly chopped cup milk
POMEGRANATE-CABERNET REDUCTION
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Saut carrots for a couple of minutes, turning often to brown all sides. Reduce heat to low. Add ground cumin, lemon juice, little salt and pepper, and drizzle with olive oil; stir to coat, cover with lid, and cook for 5-7 minutes. POMEGRANATE-CABERNET REDUCTION Using a small sauce pan, heat olive oil over medium-high heat. Saut onions until translucent, add pomegranate seeds and saut for another couple of minutes. Add braising liquid, wine, salt and pepper. Reduce heat to low and simmer, covered, for 15 minutes, stirring often and pressing with wooden spoon to burst the seeds. Drain using fine mesh strainer, pushing through. Return sauce to pan and keep on very low heat until ready to serve.

1/2 cup pomegranate seeds 1/4 cup onions, diced 1/4 cup braising liquid 1/4 cup Judds Hill 2008 Cabernet
Serve a portion of the puree in the center of the plate (spring form or with a spoon), top with the lamb shoulder and place 4 carrots around the puree. Drizzle reduction around plate.

BY chArleS neAVe Just a few miles from Calistoga, at the northern-most part of the Napa Valley, sits a beautiful boutique winery named Summers Estate. It is home to graceful architecture (both the tasting room and the winery itself) and equally graceful wines at the hands of winemaker and vineyard manager Ignacio Blancas. Ignacio has been with the winery since founder Jim Summers hired him to work in the cellar in 1997. Along the way Ignacio, a native of Michoacan, Mexico, completed his Certification in Viticulture and Enology, in 2004. Were a small winery, Jim says. So teamwork is absolutely integral to our success. I could not have asked for a better member of the team than Ignacio. This winery is built on his efforts as much as it is on mine and on my wife Beth. Ignacio was instrumental in the replanting of most of the winerys 50 acres of vineyards. As the saying goes, Great wine starts with great vineyards and with the grapes, and Ignacio has helped Summers Estate grow the best grapes possible and has discovered ways to enhance the volcanic soil on the property to best take advantage of one of the qualities that give their wines that distinctive taste. So what does he think of the wine that will be made as the 2011 vintage? Its going to be good, I think, but it was a very challenging year. In the 16 harvests I have been a part of here, it was the most challenging for both farming and winemaking, but well have to see how it turns out when it is all over and done and in the bottle. Then we will really know. But I am optimistic. The wines made at this small winery include Chardonnay, Zinfandel, Merlot, a rare and wonderful Charbono, Petite Sirah, Cabernet Sauvignon and their unique Checkmate Bordeaux-style red wine blend, plus a Muscat Canelli and a deep, rich Port. One thing to remember is that the wines they craft are all produced in small lots and are only available at certain times during the year, so they rotate wines on and off their tasting menu as they become available. We are also one of only a few tasting rooms pouring Charbono wine, said Beth Summers. Only 80 acres of Charbono are planted in all of California, half of it here in Calistoga. This area is a sweet spot for Charbono, and most of the older vineyards are here. Only 16 wineries produce Charbono; with Summers Estate Wines holding the title of Charbono King for producing the largest amount of this special wine annually, about 2000 cases in all. No matter which of the wines you sample in their warm, friendly tasting room, with its fireplace, lots of windows and three-sided tasting bar, you will enjoy the experience, one you will return to and recommend to your friends when they journey here, to the northern part of wine country, is over. And what greater endorsement could there be than that?

Sonoma County Wineries Roll Out Their Wine Barrels for Exclusive Tasting Weekends Next Month
Wine Road Northern Sonoma County Hosts Its 34th Annual Barrel Tasting
For the first two weekends in March, visitors to Sonoma County have the opportunity to experience young, unfinished wines still in the barrel at Wine Road Northern Sonoma Countys annual barrel tasting. Over the weekends of March 2-4 and 9-11, from 11 a.m. to 4 p.m., wine lovers can meet winemakers, sample wines from the barrel and purchase futures at a substantial discount. Enthusiasts can taste and then purchase the wine at the event at a 25-30% markdown, and receive their case lot 12-18 months later. Many of the wines sampled throughout the weekend are produced in such limited quantities that they are sold exclusively as futures. More than 100 wineries open their cellar doors as they celebrate this years Barrel Tasting. Members of the Wine Road are located in the Dry Creek, Russian River and Alexander Valleys in Northern Sonoma County. A complete list of participating wineries is available at www.wineroad.com. When Philippe Thibault, the Hospitality Operations Manager at Chateau St. Jean, talks about the winerys property he gets very excited, and rightly so. The setting on Highway 12 in the upper reaches of the Sonoma Valley is absolutely gorgeous. The grounds of Chateau St. Jean lend themselves to elegance, sophistication and romance, Philippe enthuses. Its like going to France without the travel! It doesnt seem like it now in the wintertime, but during the rest of the year, the grounds are just so beautiful. It doesnt really matter what time of year you go to Chateau St. Jean, it is always one of the most beautiful stops in the Sonoma wine country and there is so much to see on the grounds and in the two tasting rooms. The Reserve Tasting Room is located in the original house that was built on the property in 1920, and it does look like a French Chateau, hence the name. The rooms are large and comfortable and the wines are excellent. The other tasting room, completed in 2000, is also an event space and an extremely large gift shop. With a very long tasting bar, the room also boasts a deli featuring a variety of charcuterie, cheeses, olives and the like where wine tasting can easily become lunch. There is also the opportunity to sample the various olive oils that are marketed by the winery, and browse the wide array

Collage Retrospective by Douglas DeVivo at the Charles Creek Tasting Room & Gallery
Fun and colorful are words often used to describe the unique works of local artist Douglas DeVivo whose retrospective of 15 years as a collage artist is currently on display at the Charles Creek Tasting Room & Gallery. I paint with paper, says the artist, creating depth and shadow from bits of written text, old illustrated technology and slivers of our personal history. My process is quick and instinctual; there is something meditative about cutting and laying paper. Time just flies away Beyond the surface appeal that encourages comfortable
engagement with each piece, the viewer will find layer upon layer of depth, complexity and ever-changing perspectives. The early work, DeVivo observes, is so different; I was into furniture making at the time so most are boxed (three dimensional). Over the years the work has become more open, more emotional and visually complex. These collages hit you on so many different levels. Each one has a rich visual history; they bring back memories. You can look forever and never see it all! Douglas DeVivo lives and works in Jenner, California. This show will run through March 31, 2012. Founded in 1973, Chateau St. Jean has long been recognized as a leader in Vineyard Designated wines. Winemaker Margo Van Staaveren uses her 30 years of vineyard and winemaking expertise with Chateau St. Jean to highlight the best of each vineyard in the wines.
In 1999, Chateau St. Jean was the first Sonoma winery to be awarded the prestigious Wine of the Year award from the Wine Spectator magazine for its 1996 Cinq Cepages, a Bordeaux-style blend of five varietals. The winery received high acclaim once more when it received the #2 Wine of the Year from Wine Spectator for its 1999 Cinq Cepages. Winemaker Van Staaveren has also been named Winemaker of the Year in 2008 by Wine Enthusiast magazine. Inspiration for the lush gardens that surround the property was based on the classic estate gardens of the Mediterranean, as seen through the use of citrus-planted terracotta pots and the generous use of herbs and flowers. The winery has integrated existing site features and vistas into a landscape that is both relaxed and elegant to exemplify Sonoma wine country.

Bodega Wine Estate is going green! Irish green that is! At our last food and wine pairing, I asked our winemakers what they would cook for St. Patricks Day and all three gave the same answerbut the similarities stopped right there! These master chefs all began describing their mouthwatering recipes for Irish stew, argued over lamb or beef, with or without carrots, Guinness or red wine, barley or cabbage. About the only thing they agreed upon were the potatoes! And when it came to discussing the spices, Ive never heard more spirited arguments both for or against rosemary. There really wasnt much else to do but to showcase all three recipes. Bodega Wine Estates, home to an incredible case of talented and personable winemakers, will be hosting an Irish stew cook-off on Sunday, March 18. Each of the award-winning vintners will prepare his finest version of this hearty, wine-friendly meal. Never before have so many wines joined their makers for a food pairing bout to make the Irish proud. Bodega Wine Estates well-appointed tasting room will be just the first stop. Follow your nose and meander through the winery to discover more stations where food and wine are paired to thrill your senses, satisfy your hunger and excite the palate. Each of the winemakers: Paul Hoffman (Hoffman Family Cellars), Josh Stein (Stein Family Wines) and Robert Amox (Knightswood Vineyards and Winery) will be there to chat with you, defend their recipes and tantalize you with their wines.
