Rice

MIXED FRIED RICE

FOR THE MASALA Garlic - 3 cloves(finely chopped) Carrot - 2 Beans - 12 Capsicum - 1 small Cabbage - 3/4 - 1 cup Green peas - 1/2 cup(boiled) Egg - 3 Chicken breast - 2 Pepper - 2 tsp Spring onion(chopped) Soya sauce - 2 tbsp Salt Oil

1. Take a pan,combine chicken pieces,1 tsp pepper pwd,salt,water& cook the chicken till done.Shred the chicken into small pieces.Heat a frying pan,pour oil &saute the chicken till it turns light brown in colour.Remove from fire & keep it aside. 2. Take a small bowl,add eggs,1/2 tsp pepper pwd,salt& beat it very well.Heat a pan, pour oil,pour the beaten egg & scramble the eggs.Remove from fire & keep it aside. 3. Cut carrot,beans,capsicum& cabbage lengthwise. 4.Heat a pan,pouroil,add garlic &saute till it raw smell goes.To this add carrot, beans,capsicum,cabbage,green peas &saute till it turns soft.Then add fried shredded chicken,srambledeggs,soya sauce 2-3 tbsp,pepper 11 1/2 tsp,salt,spring onion&saute one after the other.Remove from fire & keep it aside FOR THE RICE Make ghee rice out of 3 glasses of basmati rice(long rice will be better).Dont add cinnamon,cloves,cardamom while preparing ghee rice for fried rice. METHOD Take a big pan combine ghee rice & masala little by littlle,also add little soya sauce & pepper pwd,spring onion while mixing rice &masala.Combine all the rice &masala.Keep for dum on low fire.When its ready remove from fire,garnish with spring onion & serve it hot.
