Beef - Thai Curry

This recipe is for a Thai beef curry made with coconut milk, red curry paste, lime leaves, beef, green and red chillies, fish sauce, sugar, and Thai basil. The beef and onions are fried then coconut milk and spices are added and simmered until the beef is tender. It is served over boiled rice and topped with fresh chilli, basil leaves, and coconut milk.

Thai Beef Curry

Vegetable Oil 2 tbsp


Onions chopped ½ 5
Coconut milk 400ml 2.5lt
Thai red curry paste 1 tbsp 100g
Lime leaves 2 20
Beef finely sliced 300g 3k
Green chilli finely sliced 1 10
Red chilli finely sliced 1 10
Fish sauce 1 tbsp 150 ml
Caster sugar 1 tbsp 120g
Thai Basil chopped ½ bunch 200g
Boiled rice
Method

1. Heat the oil in a pan over a high heat and fry the onions until lightly golden
2. Add 350ml of the coconut milk.
3. Stir in the curry paste and lime leaves.
4. Add the beef, chillies, fish sauce and sugar and stir well.
5. Simmer gently until the beef is tender.
6. Add most of the sweet basil leaves and simmer for a further 8-9 minutes, until the
beef is cooked.
7. Correct the seasoning and consitancey.
8. Serve with rice and garnish with fresh chilli, the remaining basil leaves and a little
coconut milk.
