Raspberry Apple Cake (46)

6 Baking, Cakes

450g (11b) cooked, sieved apples


225g (1/21b) cooked, sieved raspberries (save a few whole for decoration)
140g (Soz) butter
110g (4oz) caster sugar
340g (12oz) fresh, white breadcrumbs
1 flat teaspoon cinnamon powder
20cm (flinch) sandwich tin, greased
150ml (1/4 pint) double cream, whipped

STIR the sugar into the pureed fruit then melt the butter in a frying pan. Add
the breadcrumbs and fry over a high heat until golden brown and all the fat is
absorbed. Now stir in the cinnamon.
Sprinkle about a third of these crumbs over the base of the tin then cover with
half of the fruit. Add another crumb layer then fruit and finally the rest of the
breadcrumbs.
Bake at the centre of a pre-heated oven at gas mark 4 (350F, 180C) for about
30 minutes. Leave overnight to cool, then carefully turn the cake on to a plate.
Spoon some of the cream on the centre of the cake and use the spare
raspberries to decorate. Serve the rest of the cream separately.
