Basic Crustless Quiche
nces cottage cheese 8 ounces shredded Monterey Jack, or Swiss, or Cheddar Jack cheese Instructions: 1. Melt butter and set aside. 2. Whip the eggs with a wire whisk until fluffy. 3. Then add flour, baking powder, salt, cottage cheese, melted butter, and half of the shredded cheese. 4. Place mixture into and 8x8 inch greased pan or baking dish. 5. Top with remaining cheese. 6. Bake at 400F. for 10 minutes then reduce temperature to 350 and continue to bake for 30-35 minutes until the top is golden. 7. Cool 15 minutes before serving. This recipe can be doubled and baked in a 9x13 inch pan for a little longer. Any leftover chicken, ham, or vegetables can be added to this recipe. Recipe from Cooks.com
