13 Ingredient Substitutions 1.

1 cup buttermilk (I rarely ever have this) - 1 tablespoon vinegar or lemon juice measured into cup then fill to the cup line with milk. Let set for 3 minutes. 2. 1 tablespoon cornstarch - 2 tablespoons all-purpose flour (for thickening) 3. 1 teaspoon baking powder - 1/2 teaspoon cream of tartar plus 1/4 teaspoon baking soda 4. 1 cup sugar - 1 cup brown sugar or 2 cups sifted powdered sugar 5. 1 cup cake flour - 1 cup minus 2 tablespoons all purpose flour 6. 1 cup light cream - 1 tablespoon melted butter plus enough milk to make 1 cup 7. 1 whole egg - 2 egg yolks 8. 1 cup whipping cream, whipped - 2 cups whipped dessert topping 9. 1 clove garlic - 1/2 teaspoon bottled minced garlic or 1/8 teaspoon garlic powder 10. 1 cup molasses - 1 cup honey (honey has a much milder taste) 11. 1 square unsweetened chocolate - 3 tablespoons unsweetened cocoa powder plus 1 tablespoon shortening or cooking oil 12. 2 cups tomato sauce - 3/4 cup tomato paste plus 1 cup water 13. 1 T. fresh leaf spice (thyme, basil, oregano, etc.) - 1 t. dried leaf spice
