Further evidence that wastewater may have some nutritional benefits! Ok, so we're not talking about the stuff that goes down the drain when you flush the toilet. This time, it's the by-product of olive oil production, which has been heralded as a new 'superfood'. Once considered a nuisance, researchers in Italy have found that olive mill wastewater (OMW) is rich in healthy polyphenols — even more so than the olive oil itself. They believe that OMW could play a significant role in cancer treatment, as well as cardiovascular and neurological health. Just as we've seen with the thermal hydrolysis processes we support, there’s immense potential in re-evaluating and repurposing what we once considered waste.
