This weekend a video was released by Sorted Food (to their 2.7 million subscribers) featuring the world's first The Earthshot Prize Burger, cooked up and served by Prince William alongside the guys from Sorted. So chuffed to see Notpla's solutions playing a starring role in the video alongside the other fab Earthshot winners. For a business like Notpla - trying to shake up a highly traditional market - this sort of stage on YouTube, with an audience like this is properly game-changing. Racking up almost 500k views already, it's glaring signal to the industry that today's consumers truly care about what's being served up in their restaurants and takeaway joints, and that sustainability is consistently a reason to (or to not) choose them over others. Tip #7 from my top tips to going plant-based: Be gentle on yourself🫶🏼 Thankfully there are thousands of delicious plant-based recipes and helpful tips online, however, there is SO MUCH that it might sometimes feel overwhelming. 🤯🫠 Consider taking it one meal at a time. You don’t need to know all the things in one day. Try one new plant-based meal a week. Start with what you know and love. Recreate a plant-based version of your favorite meal that is traditionally made with meat and dairy (there’s a plant-based recipe for everything these days! 🌱) Don’t beat yourself up for not going all in with plants or if a recipe doesn’t turn out exactly the way you wanted (it’s why I have a compost bin!). Things happen and it takes time. Every time you set out to cook a plant-based dish, treat it as a fun learning experience, no matter the outcome. Give yourself grace and be gentle, knowing it’s a lifetime journey, and try to learn one new small thing each day. And celebrate the one thing you learn, no matter how big or small! Our sister business Silo is opening a fermentation factory! Right here in Hackney Wick. They have just launched a kickstarter campaign, and they're coming for your surplus! In the factory they'll grow Koji - it's the product of the century, born centuries ago, and used to ferment excess food waste into delicious flavours. Koji is the essential Zero Waste product 🦠 In partnership with us and under the expert watch of Ryan Walker, an industry-leading fermentation-fanatic, Silo is opening a factory to cultivate large amounts of koji, a preparation which is the key ingredient to the beloved umami flavours in miso, soy sauce and fish sauce. Koji is absolutely crucial to Silo’s menu - by transforming meat, fish, and dairy trim into flavour-packed garums, vegetable cuttings into miso, and sourdough bread waste into ‘zero soy sauce’, the chefs are able to deliver their famously ‘zero-waste’ and delicious offering. In their Hackney Wick-based factory, chefs Doug McMaster and Ryan Walker will now be able to offer other chefs, brewers and bakers fresh koji to minimise their food waste, too. Wonderful news! As a health / longevity-conscious consumer, foodie, and cook, I constantly talk to restaurants about how terrible seed oils are for individuals and society's economic value. I receive glazed eyes. I hope Shake Shack will see its immense value, expand to all locations, and inspire other fast food and local restaurants to adopt healthier oils and fats. Here are two tips: 📣 Next time you are at your favorite restaurant, ask what oils they cook their foods in. Don't settle with, "I think..." Sometimes, the chef will talk to you about their oils.
