Savoring Pennsylvania’s cherry season like BeWell clinician Rachel Long? 🍒 ⠀ With such a bountiful cherry harvest this year, why not try something new? ⠀ Rachel used her cherries for a savory twist: One Pan Cherry Chicken!  ⠀ 🍗🍒 One Pan Cherry Chicken Recipe: Ingredients: 2 tbsp Extra Virgin Olive Oil (divided) 1 1/8 lbs Chicken Breast (boneless, skinless) 2 cups Cherries (pitted, halved) 1/3 cup Shallot (chopped) 2 large Garlic cloves (minced) 1 cup Chicken Broth 1 tbsp Lemon Juice 2 tbsp Fresh Oregano (chopped) Sea Salt & Black Pepper (to taste) ⠀ Directions: 1️⃣ In a large skillet, heat half of the oil over medium-high heat. Cook the chicken for 4-6 minutes per side until golden brown (not fully cooked). Set aside. 2️⃣ In the same skillet, sauté cherries and shallot for 2-3 minutes until tender. Transfer to a plate. 3️⃣ Add remaining oil to the skillet and sauté garlic for 30 seconds until fragrant. Add broth and lemon juice, bring to a simmer, then reduce heat to medium-low. Simmer for 3-5 minutes until slightly reduced. 4️⃣ Return chicken and cherries to the skillet, and simmer for an additional 5-7 minutes until the chicken is cooked through.
