Blackened shrimp lettuce wraps with avocado crema and tomato salsa Makes 4 servings, each with 1 leanest, 3 green, 2 healthy fats, and 3 condiments. Total Time: 8 -12 minutes Yield: 4 servings 2 pounds raw shrimp, peeled and deveined 1 Tbsp Old Bay Blackened Seasoning 4 tsp olive oil, divided 1 cup plain, 2% Greek yogurt 6 oz avocado 2 Tbsp lime juice, divided 1 ½ cups diced tomato ¼ cup diced green bell pepper ¼ cup chopped red onion ¼ cup chopped cilantro 1 chopped and deseeded jalapeno pepper 12 large romaine lettuce leaves Directions 1. Place shrimp and Old Bay seasoning in a re-sealable plastic bag (you may need to divide shrimp into two batches). Shake contents of bag to distribute seasoning evenly. 2. Heat two teaspoons of olive oil in large-skillet, and add half of the shrimp in a single layer. Cook about 2 to 3 minutes per side, until shrimp are pink and cooked through. Repeat with remaining olive oil and shrimp. 3. For the avocado crema: Combine Greek yogurt, avocado, and one tablespoon of lime juice in blender or food processor. Blend until smooth. 4. For the tomato salsa: Stir the tomatoes, green bell pepper, onion, cilantro, jalapeno pepper, and remaining tablespoon of lime juice in a medium bowl. 5. Prepare lettuce wraps by dividing the shrimp, avocado crema, and tomato salsa evenly among the lettuce leaves, Serve immediately.

A simple, fragrant Spinach curry that uses tofu instead of cheese. An easy vegetarian recipe, developed by The Culinary Institute of America Consulting*, that makes 2 complete Lean & Green™ ,eals (1 Lean, 3 Green, 3 Condiments per serving) in 30 minutes or less. Ingredients: 1 ½ cups frozen spinach 1 ¼ cup water at room temperature 30 oz. extra firm tofu, cut into 1-inch cubes ¾ tsp salt, divided 1 cup small diced red bell pepper ½ cup minced scallion 1 tsp toasted sesame seeds 1 tbsp sour cream Directions: 1. Defrost the spinach per package directions and puree it in a blender with water until smooth; set aside. 2. Season the tofu with a ½ teaspoon of salt and air-fry at 400°F for 20 minutes (alternately cook it in a toaster oven 450°F convection-bake for 20 minutes). 3. In a wok or saucepan, combine the diced red peppers, scallions, air-fried tofu and pureed spinach. Bring to a boil, cover with a lid, and simmer for 15 minutes until the peppers have softened and the spinach puree has thickened. 4. Add remaining ¼ teaspoon of salt along with the sesame seeds and sour cream. Here are my 5 of my greatest blessings right now: Here are five greatest blessings that people often cherish: 1. “Family*: The love and support of a family is a precious blessing. Whether it's a biological family or a chosen family, having people who care about you and are there for you through thick and thin is a treasure. 2. “Health*: Good health is a blessing that's often taken for granted until it's compromised. Having a healthy body and mind enables us to live life to the fullest and pursue our passions. 3. “Friendships*: True friends are a blessing that bring joy, support, and laughter to our lives. They're the ones who stand by us through life's ups and downs and make the journey more meaningful. 4. “Personal freedom*: The ability to make choices, live life on our own terms, and pursue our dreams is a significant blessing. Whether it's freedom from oppression, financial security, or the ability to travel, personal freedom is a treasure. 5. “Unconditional love*: Experiencing unconditional love and acceptance from others, whether it's from family, friends, or a higher power, is a profound blessing.
