Description

It's a myth that people trying to sell their homes bake cookies so that their home smells "homely". But it's a myth that we like! Is there a way you can always have some cookie dough, close at hand, ready to whip out at short notice to turn into freshly baked biscuits and therefore fool everyone into thinking you've got your sh*t together? Is there ever! Listen to today's 5MFF and gather up these ingredients:
500g butter at room temperature
325g caster sugar
zest of 1 lemon or tangelo
2 eggs, beaten
250g plain flour
250g self-raising flour
200g chopped walnuts
60g choc chips
Cream the butter and sugar together until well-mixed and fluffy. Add in the zest and then the eggs one at a time. Sift in the flours and stir with a big metal spoon until just combined and then add in the nuts and choc chips. Don't over mix. Divide the dough into 4 even portions.
Shape each quarter of the dough into a log on baking paper and roll it up like a sausage, making it as neatly cylindrical as you can be bothered to do. Twist the ends of the baking paper to close then put the logs in the fridge or freezer until you're ready to use them. TO COOK: pre-heat the oven to 180C. Slice the cookie dough log into 3-4mm slices. Arrange on a baking tray (they will spread so leave space between) and bake for 10-12 minutes.
