Chapter 1. Vegetarian Breakfast Recipes
Oatmeal and Blueberry Waffles
Recipe Makes 6 Waffles.
Nutritional Information per Serving: 390 calories, 49 grams carbohydrates, 20 grams fat, 6 grams protein.
1 ¼ cup flour
1 cup oats
1 tbsp. baking powder
½ tsp. sea salt
½ tsp. nutmeg
½ tsp. allspice
1 ¼ cup almond milk
½ cup applesauce
3 tbsp. olive oil
3 tbsp. maple syrup
2 cups frozen blueberries
1 tsp. vanilla
Directions:
Stir together dry ingredients in a large mixing bowl.
Create a well in the center. Add the milk, the applesauce, the maple syrup, the vanilla, and the olive oil. Stir until
