Scottish macaroons

Scottish macaroons (or macaroon bars) might look like traditional teatime treats – yet their creamy white centres aren't fondant but sweetened mashed potato.

These desserts were reputedly invented in the 1930s by one John Justice Lees, a Scottish confectioner. According to myth, the fateful substitution of ingredient was a happy accident – though some say that his addition of mashed potato to the recipe was just one in a long series of culinary experiments Lees undertook in pursuit of the perfect filling.
