Raglan food writer Emma Galloway believes everyday food should be quick and easy, using readily available ingredients and simple techniques. In her new book, My Darling Lemon Thyme: Every day, the blogger, photographer and mother of two creates delicious meals that use ingredients that can easily be swapped out, making them more achievable. The book contains more than 100 vegetarian recipes, which are gluten-free, with many also dairy-free and suitable for vegans.

She says her “cheesecake” makes a great plan-ahead dessert and can be stored in the fridge for 4-5 days or frozen for up to three months. She uses freshly ground cardamom seeds for their superior flavour, but says
