Temperature (meat)

Temperature is a gauge of how thoroughly cooked a cut of meat is based on the color, juiciness and internal temperature when cooked. The gradations of cooking are most often used in reference to beef (especially steak and roasts) but are also applicable to lamb, pork, poultry, veal and seafood (especially fish).

Gradations, their description, and the associated temperature ranges vary regionally from cuisine to cuisine and in local practice and terminology. The table below is from an American reference book and pertains to beef and lamb.

In lieu of gradations and ranges, the United States Department of Agriculture recommends a temperature of at least 63 °C (145 °F) for beef, veal, lamb steaks and roasts in order to prevent foodborne illness.

The interior of a cut of meat will still increase in temperature 3–5 °C (5–10 °F) after it is removed from an oven or other heat source. The meat should be allowed to "rest" for at least a half-hour before being served, which makes the meat easier to carve and its structure firmer and more resistant to deformation; its water-holding capacity also increases and less liquid is lost from the meat during carving. The whole meat and the center will also continue to cook slightly as the hot exterior continues to warm the comparatively cooler interior. The exception is if the meat has been prepared in a sous-vide process, as it will already be at temperature equilibrium. The temperatures indicated above are the peak temperature in the cooking process, so the meat should be removed from the heat source a few degrees cooler.

Well-Done (album)

Well-Done is a collaborative studio album by American rapper Action Bronson and producer Statik Selektah. The project was supposed to be released two weeks before Selektah's album Population Control. However, the release date was pushed back to November 22, 2011. The album features guest appearances by Lil Fame of M.O.P., A.G. da Coroner, Nina Sky, Meyhem Lauren and Maffew Ragazino (both Meyhem and Maffew were guests on Bronson's first album Dr. Lecter).

Tyga discography

The discography of American rapper Tyga consists of four studio albums, two compilation albums, fourteen mixtapes, eight singles (including four as a featured artist), and forty-eight music videos. In 2008, Tyga released his first studio album, No Introduction, on the record label Decaydance Records. The album featured the single "Coconut Juice", which features singer Travie McCoy: the song peaked at number 94 on the US Billboard Hot 100, becoming Tyga's first song to appear on the chart. In 2010, Tyga and American singer Chris Brown released the collaborative mixtape Fan of a Fan, which included the single "Deuces": the song peaked at number 14 on the Billboard Hot 100 and became Tyga's first song to chart on the US Hot R&B/Hip-Hop Songs chart, peaking at number thirty Tyga also appeared on the song "Loyalty", a single by fellow rapper Birdman, and collaborated with rapper Lil Wayne on the non-album single "I'm on It", both of which failed to chart on the Billboard Hot 100.
