Pierogi

Pierogi or pirogi (pronounced /pɪˈroʊgi/ pi-ROH-ghee), also known as varenyky, are filled dumplings of East European origin. They are made by wrapping pockets of unleavened dough around a savory or sweet filling and cooking in boiling water. These dumplings are popular in Slavic (Polish, Russian, Slovak, Ukrainian), Baltic (Latvian, Lithuanian) and other cuisines where they are known under local names. Pierogi and varenyky are especially associated with Poland and Ukraine where they are considered national dishes.

Pierogi are often semi-circular but triangular and rectangular ones are also found. Typical fillings include potato, sauerkraut, ground meat, cheese and fruits. The dumplings may be served with toppings, such as melted butter, sour cream or fried onion. The traditional method is with onion and apple sauce.

Etymology

The English word pierogi (plural: pierogi, pierogies or pierogis) comes from Polish pierogi [pʲɛˈrɔgʲi], which is the plural from of pieróg [ˈpʲɛruk], a generic term for filled dumplings. It derives from Old East Slavic пиръ (pirŭ) and further from Proto-Slavic *pirъ, "feast". While dumplings as such are found throughout Eurasia, the specific name pierogi, with its Proto-Slavic root and its cognates in the West and East Slavic languages, including Russian пирог (pirog, "pie") and пирожки (pirozhki, "baked pastries"), shows the name's common Slavic origins, predating the modern nation states and their standardized languages. In most of these languages the word means "pie".

Until We Meet Again

by: Barrage

May the road rise up to meet you
May the wind be always at your back
May the sun shine warm upon your face now
May the rains fall soft upon your fields
And until we meet again
And until we meet again
May God hold you in the palm of his hand
May God hold you in the palm of his hand
May our children and their descendants
Be the ones to find a lasting peace
May their hopes and dreams become united
May the past be left for those who hate
And until we meet again
And until we meet again
May love and trust find a way to make a stand
May love and trust find a way to make a stand
May the road rise up to meet you
May the wind be always at your back
May the sun shine warm upon your face
May the rains fall soft upon your fields
May this world and all its wonders
Be a home to all humanity
May the people find a common purpose
May we help one another to survive
And until we meet again
And until we meet again
May Mother Earth pour her heart into our land
