Oaxaca City

The city and municipality of Oaxaca de Juárez, or simply Oaxaca, is the capital and largest city of the Mexican state of the same name. It is located in the Centro District in the Central Valleys region of the state, on the foothills of the Sierra Madre at the base of the Cerro del Fortín extending to the banks of the Atoyac River. This city relies heavily on tourism, which is based on its large number of colonial-era structures as well as the native Zapotec and Mixtec cultures and archeological sites. It, along with the archeological site of Monte Albán, were named a World Heritage Site in 1987. It is also the home of the month-long cultural festival called the "Guelaguetza", which features Oaxacan dance from the seven regions, music and a beauty pageant for indigenous women.

It is nicknamed "la Verde Antequera" (the green Antequera) due to its prior name (Nueva Antequera) and the variety of structures built from a native green stone. The name Oaxaca is derived from the Nahuatl name for the place, Huaxyacac, which was Hispanicized to Guajaca, later spelled Oaxaca. "de Juárez" was added in honor of Benito Juárez, who was a native of this state. The coat of arms for the municipality bears the image of the decapitated Donaji, who was an indigenous princess in the years immediately after the Conquest.

Oaxaca

Oaxaca (English /wəˈhɑːkə/ wə-HAH-kə, Spanish: [waˈxaka], from Nahuatl: Huāxyacac [waːʃ.ˈjá.kak]), officially Free and Sovereign State of Oaxaca (Spanish: Estado Libre y Soberano de Oaxaca), is one of the 31 states which, along with the Federal District, make up the 32 federative entities of Mexico. It is divided into 570 municipalities, of which 418 (almost three quarters) are governed by the system of Usos y costumbres (customs and traditions) with recognized local forms of self governance. Its capital city is Oaxaca de Juárez.

Oaxaca is located in Southwestern Mexico. It is bordered by the states of Guerrero to the west, Puebla to the northwest, Veracruz to the north, Chiapas to the east. To the south, Oaxaca has a significant coastline on the Pacific Ocean.

The state is best known for its indigenous peoples and cultures. The most numerous and best known are the Zapotecs and the Mixtecs, but there are sixteen that are officially recognized. These cultures have survived better than most others in Mexico due to the state's rugged and isolating terrain. Most live in the Central Valleys region, which is also an important area for tourism, attracting people for its archeological sites such as Monte Albán, native culture and crafts. Another important tourist area is the coast, which has the major resort of Huatulco. Oaxaca is also one of the most biologically diverse states in Mexico, ranking in the top three, along with Chiapas and Veracruz, for numbers of reptiles, amphibians, mammals and plants.

Oaxaca cheese (Spanish: Queso Oaxaca) is a white, semihard cheese from Mexico, similar to unaged Monterey Jack, but with a mozzarella-like string cheese texture. It is named after the state of Oaxaca in southern Mexico, where it was first made. The string cheese process, originally from Italy, which is used to produce mozzarella, was brought to Mexico by the Dominican monks that settled in Oaxaca. However, as goat milk was unavailable, they started using cow milk instead. It is available in several different shapes. It is also known as quesillo Oaxaca or thread cheese when shaped like a ball. Shaped in bricks for slicing, it is called asadero (meaning "roaster" or "broiler") or queso quesadilla.

The production process is complicated and involves stretching the cheese into long ribbons and rolling it up like a ball of yarn. Italian mozzarella is another cheese which is processed by stretching (the pasta filata process).

Queso Oaxaca is used widely in Mexican cuisine, especially in quesadillas and empanadas, where the queso Oaxaca is melted and other stuffings, such as huitlacoche and squash flowers are added to the filling.

    Legion of the 13th
    The dye is cast
As we cross the Rubicon, the dye is cast...
    The blood will flow
They call it the point of no return
But for us it just begun
    Rome's most lethal weapon
    The twin legion has arrived
    Revolution is at hand
The fire in the sky is damned
    The brave will rise
    The shadows of light
    This strength and honour
    Determined to conquer
    Fate to dominate
    Architects of war
    We are the 13th
    Brothers in arms
    Our enemies will fear
    The power that we cheer
We live to fight this dream
    To unify our world
    In dominance we rise
    Together we shall die
    Bleeding for our sun
    Our legacy never undone
    We massacred the opposition
We walk in glory, in all our envy
Loyal to the god of Mars
They crossed out path and they were lost
Hand to hand we killed them all
    Blood drenched and ripped apart
Feed them to the rabid dogs
    The 13th is law
    The brave will rise
    The shadows of light
    This strength and honor
    Determined to conquer
    Fate to dominate
    Architects of war
    We are the 13th
