Machaca

Machaca  ma't͡ʃaka  is a traditionally dried meat, spiced beef or pork, which has been rehydrated and used in the popular local cuisine of Northern Mexico and Southwestern United States and which is easily available from many ethnic groceries and supermarkets in these areas. In areas where the dried meat product is not easy to obtain, slow cooked roast beef (brisket) or skirt steak shredded then fried is sometimes substituted.

Prepared machaca can be served any number of ways from tightly rolled flautas, to tacos, to burritos, or on a plate with eggs, onions and with peppers (chiles verdes or chiles poblanos). Machaca is almost always served with flour tortillas, which tend to be large, up to 20 inches in diameter. A very popular breakfast or brunch dish is machaca with eggs, associated with miners in the State of Chihuahua.

The dish is known primarily in the north of Mexico, and the southern regions of the U.S. states of Arizona, California, and New Mexico. However, in central and southern Mexico, it is not well known by lower socioeconomic classes.

Machaca (album)

Machaca is an album by American composer-arranger/keyboadist Clare Fischer, the second to feature his Latin jazz combo, Salsa Picante. Recorded on May 16 and 17, 1979, it was released in 1980 on the German label, MPS, and in the U.S. the following year on the Discovery label.

Reception

Los Angeles Times jazz critic Leonard Feather awarded the album 3 and a half stars, citing the blend of "light rock, Brazilian and miscellaneous Latin," and further noting that:

    The fulgorid insect Fulgora laternaria (often misspelled "lanternaria"), is a planthopper known by a large variety of common names including lantern fly, peanut bug, peanut-headed lanternfly, alligator bug, machaca, chicharra-machacuy, cocoposa (in Spanish) and jequitiranaboia (in the Amazon region and elsewhere in Brazil).

    Description

    Fulgora laternaria can reach a length of 85–90 millimetres (3.3–3.5 in), with a wingspan up to 100–150 millimetres (3.9–5.9 in). This insect has a protuberance at its head as long as 10–15 millimetres (0.39–0.59 in), looking like a peanut and showing false eyes to resemble that of a lizard or a serpent, and which was originally - and falsely - believed to be luminescent. When attacked it protects itself by displaying large, yellow, frightening fake eyes on its hind wings, releasing a nasty smelling substance and perhaps with its quite unusual head. Adults can be found from June to December. They feed on the sap of plants, mainly from some trees as Hymenaea courbaril, Simarouba amara and Zanthoxylum species.
