Francois Bise is a French restaurateur. He elevated his wife's restaurant, three Michelin-starred French restaurant, Auberge du Père Bise to a legendary status.
He trained under the father of modern French cuisine, Fernand Point.
Auberge began as a one room restaurant in 1901 by his wife, Charlyne. He joined the restaurant later and elevated it to its legendary status.
He is married to Charlyne, who ran the restaurant after his death in 1983 from cancer. His daughter, Sophie, is the patron chef of Auberge du Père Bise. She won back the three star michelin status after his death, at a young age of 21.
In France, the bise is a northern wind, cold and generally dry. It may also refer to a traditional French greeting among close friends and family members. It consists of two, three, or four kisses on the cheek. The number depends on the region where the person lives.
In Switzerland the bise blows from the north-east, above all during the winter months, and is due to a high-pressure cell north-west of Switzerland. The effects of the bise are strongest in Geneva, situated in a narrow passage between the Jura mountains in the West and the Alps in the South. Many foreign travellers to this Swiss city have commented upon it. It may also refer to a traditional greeting among close friends and family members. It consists of three kisses on the cheek.
An alternative form in English is Biz. The term entered Middle English from French bise. Its origin is unknown.
