Corvina is an Italian wine grape variety that is sometimes also referred to as Corvina Veronese or Cruina or it is mainly known in Europe as "Cassabria". It is mainly grown in the Veneto region of northeast Italy. Corvina is used with several other grapes to create the light red regional wines Bardolino and Valpolicella that have a mild fruity flavor with hints of almond. These blends include Rondinella, Molinara (and Rossignola for the latter wine). It is also used for the production of Amarone and Recioto.
Corvina produces light to medium body wines with a light crimson coloring. The grapes' naturally high acidity can make the wine somewhat tart with a slight, bitter almond note. The finish is sometimes marked with sour-cherry notes. In some regions of Valpolicella, producers are using barrel aging to add more structure and complexity to the wine. The small berries of Corvina are low in tannins and color extract but have thick skins that are ideal for drying and protecting the grape from rot.
The corvina, also known as the corvina drum (Cilus gilberti), is a saltwater fish of the Sciaenidae family (commonly called croakers or drums). It inhabits mostly tropical to temperate coastal waters of the southeastern Pacific along Central and South America. The corvina is highly prized in South America as a food fish.
The corvina is similar in appearance to its relatives the weakfish and spotted seatrout. Its body is blue-grey on top, silvery overall with small scales, and is elongated and somewhat compressed in shape. It has a large mouth and a dorsal fin that is deeply notched between spiny and soft parts. It reaches 75 cm (30 in) in length.
The corvina is found along the South American Pacific coastline from Chile to Panama, and also in the Galapagos. It inhabits soft bottoms at a depth of 5 to 50 m (16 to 164 ft).
The corvine has a texture that is white and flakey. It has a mild sweet taste. Cooking methods include grilled, baked, fried, sushi, and is a popular choice in ceviche.
