Churro

A churro is a fried-dough pastry—predominantly choux—based snack. Churros are popular in Spain, France, the Philippines, Portugal, Ibero-America and the Southwestern United States. In Spain, churros can either be thin (and sometimes knotted) or long and thick. They are normally eaten for breakfast dipped in champurrado, hot chocolate or café con leche.

History

The origin of churros is unclear. One theory is they were brought to Europe from China by the Portuguese. The Portuguese sailed for the Orient and, as they returned from Ming Dynasty China to Portugal, they brought along with them new culinary techniques, including modifying the dough for youtiao, also known as Youzagwei in southern China, for Portugal. However, they modified it by introducing a star design because they did not learn the skill of "pulling" the dough (the Chinese Emperor made it a capital crime to share knowledge with foreigners). As a result, churros are not "pulled" but rather extruded out through a star-shaped die.

Churra

The Churra (also known as Spanish Churro) is an ancient Iberian breed of sheep from Zamora province in Castile and León. The ewes produce the milk for Zamorana cheese; the meat is prized also.

The Churra (renamed "churro" by American frontiersmen) was first imported to North America in the 16th century and used to feed Spanish armies and settlers. By the 17th Century, churros were popular with the Spanish settlers in the upper Rio Grande Valley. Flocks of churros were also acquired by Navajo through raids and trading, and soon became an important part of their economy and culture.

In the early 1900s, the federal government decided that other breeds would be better for reservation life and a program of out-breeding nearly caused the churro sheep to go extinct. People concerned with quality of wool and the history and culture of the Navajo are making an effort to save the breed.

Spanish traditional wisdom advises not to mix churras and merinas, i.e., not to confuse different concepts.

Half Breed

by: Cher

My father married a pure Cherokee
My mother's people were ashamed of me
The indians said I was white by law
The White Man always called me "Indian Squaw"
Half-breed, that's all I ever heard
Half-breed, how I learned to hate the word
Half-breed, she's no good they warned
Both sides were against me since the day I was born
We never settled, went from town to town
When you're not welcome you don't hang around
The other children always laughed at me "Give her a feather, she's a Cherokee"
We weren't accepted and I felt ashamed
Nineteen I left them, tell me who's to blame
My life since then has been from man to man
