Cask ale

Cask ale or cask-conditioned beer is unfiltered and unpasteurised beer which is conditioned (including secondary fermentation) and served from a cask without additional nitrogen or carbon dioxide pressure. Cask ale is also sometimes referred to as real ale in the United Kingdom, a term coined by the Campaign for Real Ale, often now extended to cover bottle-conditioned beer as well.

The history of cask and keg beer

Cask means container. The Histories of Herodotus, written in 424 BC, refers to "casks of palm-wood filled with wine" being moved by boat to Babylon, though clay vessels would also have been used. Stout wooden barrels held together with an iron hoop were developed by the north European Celts during the Iron Age for storing goods. Over the centuries other methods have been developed for preserving and storing beer but this method is still used, particularly in Britain.

Ale

Ale is a type of beer brewed using a warm fermentation method resulting in a sweet, full-bodied and fruity taste. Historically the terms "beer" and "ale" respectively referred to drinks brewed with and without hops. Over time, "beer" came to refer to all beers, though—after the development of cold fermented beer ("lager")—"ale" came to refer to warm fermented beers only.

Ale, as with most beers, typically has bittering agent(s) to balance the sweetness of the malt and to act as a preservative. Ale was originally bittered with gruit, a mixture of herbs (sometimes spices) which was boiled in the wort prior to fermentation. Later, hops replaced the gruit blend in common usage as the sole bittering agent.

History of ale

Ale, along with bread, was an important source of nutrition in the medieval world, particularly small beer, also known as table beer or mild beer, which was highly nutritious, contained just enough alcohol to act as a preservative, and provided hydration without intoxicating effects. Small beer would have been consumed daily by almost everyone, including children, in the medieval world, with higher-alcohol ales served for recreational purposes. The lower cost for proprietors combined with the lower taxes levied on small beer led to the selling of beer labeled "strong beer" that had actually been diluted with small beer. In medieval times, ale may have been safer to drink than most water (the germ theory of disease was unheard of, and the sterilizing properties of boiling unknown); however, there is no period evidence that people were aware of this nor that they chose to drink ale for this reason. The alcohol, hops, and some ingredients in gruit used to preserve some ales may have contributed to their lower load of pathogens, when compared to water. However, ale was largely safer due to the hours of boiling required in production, not the alcoholic content of the finished beverage.

Barrel

A barrel, cask, or tun is a hollow cylindrical container, traditionally made of wooden staves bound by wooden or metal hoops. Traditionally, the barrel was a standard size of measure referring to a set capacity or weight of a given commodity. For example, in the UK a barrel of beer refers to a quantity of 36 imperial gallons (160 L; 43 US gal). Wine was shipped in barrels of 119 litres (31 US gal; 26 imp gal).

Modern wooden barrels for wine-making are either made of French common oak (Quercus robur) and white oak (Quercus petraea) or from American white oak (Quercus alba) and have typically these standard sizes: "Bordeaux type" 225 litres (59 US gal; 49 imp gal), "Burgundy type" 228 litres (60 US gal; 50 imp gal) and "Cognac type" 300 litres (79 US gal; 66 imp gal). Modern barrels and casks can also be made of aluminum, stainless steel, and different types of plastic, such as HDPE.

Cask is a cloud-based Big Data application platform for developers. Rather than simply providing another cloud service for writing and running Hadoop jobs, Cask allows developers to more easily build, deploy and manage Big Data applications on top of the components within the Hadoop ecosystem.

Function
