Casing (sausage)

Casing, sausage casing, or sausage skin is the material that encloses the filling of a sausage. Casings are divided into two categories, natural and artificial. Artificial casings, such as collagen, cellulose, plastic, and extruded casings, are relatively new to the field, mainly borne of market demand during the technological advances of the early 20th century.

History

It is often assumed that sausages were invented by the Sumerians in the region that is Iraq today, around 4000 BC. Reference to a cooked meat product stuffed in a goat stomach like a sausage was known in Babylon and described as a recipe in the world’s oldest cookbook 3,750 years ago.

The Chinese sausage làcháng, which consists of goat and lamb meat, was first mentioned in 589 BC. The Greek poet Homer mentioned a kind of blood sausage in his Odyssey (book 20, poem 25); Epicharmus (ca. 550 BC — ca. 460 BC) wrote a comedy entitled The Sausage. Numerous books report that sausages were already popular among the ancient Greeks and Romans.

Sausage

A sausage is a food usually made from ground meat, often pork, beef or veal, along with salt, spices and breadcrumbs, with a skin around it. Typically, a sausage is formed in a casing traditionally made from intestine, but sometimes synthetic. Sausages that are sold uncooked are cooked in many ways, including pan-frying, broiling and barbecuing. Some sausages are cooked during processing and the casing may then be removed.

Sausage making is a traditional food preservation technique. Sausages may be preserved by curing, drying (often in association with fermentation or culturing, which can contribute to preservation), smoking or freezing.

There is a huge range of national and regional varieties of sausages, which differ by their flavouring or spicing ingredients, the meat(s) used in them and their manner of preparation.

History

Sausage making is an outcome of efficient butchery. Traditionally, sausage makers would salt various tissues and organs such as scraps, organ meats, blood, and fat to help preserve them. They would then stuff them into tubular casings made from the cleaned intestines of the animal, producing the characteristic cylindrical shape. Hence, sausages, puddings, and salami are among the oldest of prepared foods, whether cooked and eaten immediately or dried to varying degrees.

Sausage (band)

Sausage was a short-lived alternative/funk rock band featuring a reunion of the 1988 lineup of the San Francisco Bay Area band Primus. They released the album Riddles Are Abound Tonight in April 1994 through the Interscope Records imprint Prawn Song Records.

History

Primus

Primus was formed in 1984 by singer and bassist Les Claypool and guitarist Todd Huth. The two of them played with a number of drummers before eventually settling on Tim "Curveball" Wright two years later. At this time, Jay Lane was playing with The Uptones, and later the Freaky Executives, for whom Claypool acted as a roadie. Claypool was a huge fan of Lane's, and when Wright left Primus in the summer of 1988, Lane was asked to suggest his replacement. Lane accepted the position himself, as the Freaky Executives were, in Claypool's words, "in record company hell. They were somehow getting dicked around by their record company".

After recording a demo together, which they titled Sausage, Lane left Primus at the end of 1988 when "something good happened" with the Freaky Executives' record deal. Huth also left shortly after, wishing to dedicate more time to his family as he had just had a son and was expecting another. Claypool continued Primus, replacing Huth and Lane with Larry LaLonde and Tim Alexander, respectively.

Sausage (album)

Sausage is an independent demo album by the band Baboon. It was released on cassette in 1992. This version of "Kamikaze" is also on the We're from Texas compilation.
