Rye bread

Rye bread is a type of bread made with various proportions of flour from rye grain. It can be light or dark in color, depending on the type of flour used and the addition of coloring agents, and is typically denser than bread made from wheat flour. It is higher in fiber than white bread and is often darker in color and stronger in flavor. Compared to white bread, rye bread has a lower glycemic index, which means it causes less of an increase in blood sugar.

Dark rye bread was considered a staple through the Middle Ages. Many different types of rye grain have come from north-central and western and eastern Europe such as Scandinavia, Finland, Baltic countries, Poland, Russia, The Netherlands, Belgium, France and Germany. Around 500 AD, the Saxons and Danes settled in Britain and introduced rye, which was well suited to its temperate climates.

Biochemistry

While rye and wheat are genetically similar enough to interbreed (resulting in hybrids known as triticale), their biochemistries differ enough that they affect the breadmaking process. The key issue is differing amylases, the enzyme which breaks starch down into sugar. While wheat amylases are generally not heat-stable and thus do not affect stronger wheat gluten that gives wheat bread its structure, rye amylase remains active at substantially higher temperatures. Since rye gluten (secalin) is not particularly strong, rye dough structure is based on complex polysaccharides, including rye starch and pentosans. As a result, amylases in rye flour can break down dough structure, inhibiting it from rising.

Black Bread

Black Bread (Catalan: Pa negre, IPA: [ˈpa ˈnɛɣɾə]) is a 2010 Catalan-language Spanish drama film written and directed by Agustí Villaronga. The screenplay is based on the homonymous novel by Emili Teixidor, with elements of two other works by him, Retrat d'un assassí d'ocells and Sic transit Gloria Swanson.

The film won thirteen Gaudí Awards, nine Goya Awards, including best film, best director and best adapted screenplay. It was selected as the Spanish entry for the Best Foreign Language Film at the 84th Academy Awards being the first Catalan-language film to do so.

Plot

In the harsh post-war years' Catalan countryside, Dionís, a bird dealer, is killed with his son by a man in a hooded cape. Andreu, an 11-year-old boy, discovers the bodies. The falangist mayor of the town blames Farriol, Andreu’s father. Farriol, who was Dionís’s business partner dealing with birds, is an easy target for incrimination due to his suspicious background as a supporter of the Second Spanish Republic. Years before, the mayor and Farriol were rivals vying for the love of Florència, Andreu’s mother, cementing the major resentment against both of them. Fearing for his life, Farriol decides to flee and cross the border into France. Florència has to work in a factory in Vic so Andreu is sent to live with his paternal relatives in a house full of women and children. Àvia, Andreu’s old grandmother and Ció, a widower aunt who has a son a few years older than Andreu, work looking after the country home of the richest family of the region, the Manuben. There is also a younger aunt, Enriqueta, who is being pressured into marrying an older neighbor she does not love. The grim household is completed by Andreu’s orphan cousin Núria, a maimed but beautiful girl around his age, who lost a hand while playing with a grenade.
