Apam balik (may be known as 'Turnover Pancake' in English) or also known as Martabak Manis,Terang Bulan,Apam Pulau Pinang,Kue Bandung(in Semarang and it's surrounding area), Kuih Haji (in certain areas), Min Chiang Kueh, Hok Lo Pan,Ban Jian Kuih or Chin Loong Pau is a type of griddle pancake common in Southeast Asia. Apam Balik is usually sold at specialist roadside stalls throughout Brunei, Indonesia, Singapore and Malaysia.
The pancake's batter is made from the mixture of flour, eggs, sugar, baking soda, coconut milk and water. The batter is cooked upon a thick round iron frying pan in plenty of palm margarine to avoid it stuck to the pan. Then other ingredients are sprinkled upon the pancake, such as sugar, peanut granules, chocolate sprinkles, sesame, or cheddar cheese. The content might be only one kind or combination of these fillings; the most common is peanut granules filling, but chocolate sprinkle combo and cheddar cheese are also available. The cake is also named terang bulan because of the big round pancake (prior of folding) resembles full moon. Then, the pancake is folded (hence the name is "turnover pancake") and cut into several pieces. The texture of Apam Balik is akin to a crispier form of crumpets.
Apam is a coastal town and capital of Gomoa West District in the Central Region of Ghana, located approximately 45 km east of the Central regional capital of Cape Coast.
Apam is the site of Fort Lijdzaamheid or Fort Patience, a Dutch-built fort which was completed in 1702, which dominates the fishing harbor and town from a rocky peninsula located on the south side of the town. It used to be a major port in pre-independence times but after Tema was built shipping was forbidden. The town has an Odikro (Chief of the town). It is also a major town in the Gomoa Akyempem Paramountcy. It has a lot of fishermen as fishing is the main industry.
