Alsatian cuisine incorporates Germanic culinary traditions and is marked by the use of pork in various forms. The region is also known for its wine and beer. Traditional dishes include baeckeoffe, flammekueche, choucroute, and fleischnacka. Southern Alsace, also called the Sundgau, is characterized by carpe frite (that also exists in Yiddish tradition).
Alsatian food is synonymous with conviviality, the dishes are substantial and served in generous portions and it has one of the richest regional kitchens.
The festivities of the year's end involve the production of a great variety of biscuits and small cakes called bredala, as well as pain d'épices (gingerbread) which are baked around Christmas time.
The gastronomic symbol of the région is undoubtedly the Choucroute, a local variety of Sauerkraut. The word Sauerkraut in Alsatian has the form sûrkrût, same as in other southwestern German dialects, and means "sour cabbage" as its Standard German equivalent. This word was included into the French language as choucroute. To make it, the cabbage is finely shredded, layered with salt and juniper and left to ferment in wooden barrels. Sauerkraut can be served with poultry, pork, sausage or even fish. Traditionally it is served with pork, Strasbourg sausage or frankfurters, bacon, smoked pork or smoked Morteau or Montbéliard sausages or a selection of pork products. The German Shepherd (German: Deutscher Schäferhund, German pronunciation: [ˈʃɛːfɐˌhʊnt]) is a breed of medium to large-sized working dog that originated in Germany. The breed's officially recognized name is German Shepherd Dog in the English language, sometimes abbreviated as GSD and was also formerly known as the Alsatian in Britain. The German Shepherd is a relatively new breed of dog, with their origin dating to 1899. As part of the Herding Group, German Shepherds are working dogs developed originally for herding sheep. Since that time, however, because of their strength, intelligence, trainability and obedience, German Shepherds around the world are often the preferred breed for many types of work, including disability assistance, search-and-rescue, police and military roles, and even acting. The German Shepherd is the second-most popular breed of dog in the United States and fourth-most popular in the United Kingdom.
German Shepherds are medium to large-sized dogs. The breed standard height at the withers is 60–65 cm (24–26 in) for males and 55–60 cm (22–24 in) for females. The weight standard is 30–40 kilograms (66–88 lb) for males and 22–32 kilograms (49–71 lb) for females. They have a domed forehead, a long square-cut muzzle and a black nose. The jaws are strong, with a scissor-like bite. The eyes are medium-sized and brown with a lively, intelligent and self-assured look. The ears are large and stand erect, open at the front and parallel, but they often are pulled back during movement. They have a long neck, which is raised when excited and lowered when moving at a fast pace. The tail is bushy and reaches to the hock.
Alsace wine or Alsatian wine (in French: Vin d'Alsace) is produced in the Alsace region in France and is primarily white. Because of its Germanic influence, it is the only Appellation d'Origine Contrôlée region in France to produce mostly varietally labelled wines, typically from similar grape varieties to those used in German wine. Along with Austria and Germany, it produces some of the most noted dry Rieslings in the world as well as highly aromatic Gewürztraminer wines. Wines are produced under three different AOCs: Alsace AOC for white, rosé and red wines, Alsace Grand Cru AOC for white wines from certain classified vineyards and Crémant d'Alsace AOC for sparkling wines. Both dry and sweet white wines are produced.
In 2006, vines were grown on 15,298 hectares (37,800 acres) in 119 villages in Alsace, and 111.3 million litres of wine was produced, corresponding to 148.4 million bottles of 750 ml, generating 478.8 million euro in revenue. Of the vineyard surface, 78% was classified for the production of AOC Alsace wines, 4% for AOC Alsace Grand Cru, and 18% for AOC Crémant d'Alsace. About 90% of the wine produced is white. 25% of the production is exported, and the five largest export markets for still Alsace wine in terms of volume are Belgium, Netherlands, Germany, Denmark and the United States.
