This Spring COYA invited its consort of head Chefs to a week-long culinary exploration to its roots in Peru. The journey is testament to COYA’s dedication to continuous learning and innovation in the culinary arts, allowing the international Head Chefs to connect with each other and discover Peru’s vibrant and enchanting culture that has shaped COYA’s culinary identity. The selected chefs from COYA's global locations were given the opportunity to immerse themselves deep into the heart of Peruvian culture and its culinary landscape, exploring new ingredients, authentic recipes and cooking techniques further inspiring seasonal menus. Working closely with PROMPERU, the official tourism board for Peru, the chefs journeyed through breath taking landscapes and discovered authentic Peruvian workshops, showcasing craftsmanship and antiquities made especially for COYA. The team visited key cooking schools teaching prospective apprentices and students creating workshops showcasing their expertise. "COYA's commitment to excellence goes beyond the walls of our establishments. This journey is a testament to our dedication to continuous learning and innovation in the culinary arts. Meet Nicola Negrini, a culinary maestro whose journey with #COYA exemplifies dedication, growth, and a passion for great food. Nicola moved to UAE and joined COYA #Dubai as a Chef De Partie in 2014. From the get-go, his culinary talent and work ethic were evident, setting the stage for a remarkable career growth with COYA ahead. Driven by ambition, Nicola's journey saw a significant milestone in 2016 when he was rightfully promoted to the position of Senior Chef De Partie. His leadership skills and ability to elevate dishes earned him the respect and admiration of colleagues and patrons alike. In February 2017, he embraced a new chapter as he moved to COYA #AbuDhabi, assuming the role of Junior Sous Chef. This move not only showcased Nicola's versatility but also demonstrated his willingness to embrace challenges head-on. Two years after his move to COYA Abu Dhabi, he was promoted as a Sous Chef. He returned back to COYA Dubai in 2021, where he continues to impress everyone with his innovative approach to cooking and passion for delivering exceptional dining experiences.
