数寄屋橋交差点よりすぐの場所にある「一㐂(いちき)」さん。
年末の忘年会で利用させて頂きましたのでご紹介。
場所は銀座駅より徒歩2分ほど。
HERMES銀座店を正面に右手の路地を進んですぐ左の雑居ビル4階。
エレベーターを降りると正面に黄色い店名と藍色の暖簾がかかります。
前のお客さんと入れ替えで入店となり、少し待って店内へ。
内観は天井に岩肌の質感を残しつつ、和の趣きを合わせた和空間で、白木のカウンターが綺麗に映える12席。奥には個室を2つ備える造り。
大将含めて2名の職人さんが腕を振るいます。

食べログからも安易に予約可能な点に対するお店の雰囲気は良く、また大将の控えめな接客にはお客同士の会話に集中できる接待向きな銀座の鮨店入門編。
初球から淡々と握りが提供されていくスタイルで、その序盤の合間につまみがいくつか提供されました。
握りは粒感を伝えるシャリが柔らかく握られて、ほぐれは良い印象。そこからもっちりと纏まり、酸味は穏やかでやや甘み寄り。
鮪の仲卸しはやま幸で、この日は大トロのみアイルランド産、他は青森大畑の延縄ものを使用。
中トロはしっとりした甘みの膨らみをつくり、赤身は和がらしを乗せて、強い辛さと酸味が交わる粋な味わい。
大トロは炙ってさらに甘旨味を高めて、気持ちの良いトロけに塩で相乗させた強い味の着地。
イクラは大きな粒から豪快な弾けを楽しめ、小川のうにはクリアなミネラルにほのかなコクを添えて口どける。
他のネタは主張しすぎず、もうひと押しが欲しいところも。それでもコンスタントな味わいで楽しませてくれます。

20時半からの予約で伺いましたが、ラストが22時半ということでやや駆け足で、つまみ5品と握り15貫ほどに〆の干瓢巻きとデザートが付いて、おまかせとしては満たされる内容。
常連さんもいらしたようで大将との掛け合いを楽しんでおられましたが、基本的には言葉数少なめでお客同士の会話を楽しむ場に向いている空間。
奥には個室も備えてありますので、いざという時の接待用に重宝してくれそうな銀座の鮨店です。
