Our restaurant uses local vegetables because we want people to know the charms of Tachikawa. The owner still owns the farm from his agricultural experience in high school. In order to provide seasonal ingredients in the most delicious condition, we purchase from different farmers according to type. Our restaurant is run by the owner who has experience working at famous three-star French cuisine and Nepalese Cuisine. We are fascinated by Japan's food culture, where fermented foods such as miso have been deeply rooted since ancient times, and are equipped with a fermentation room. We prepare everything by hand, from dressings and other seasonings to side dishes such as achar, desserts, homemade drinks, and even the yogurt we serve!
