It has been 49 years since the restaurant opened in a very quiet residential area. The second generation took over in June 2019, keeping the taste of the previous owner's soup intact. After kneading and solidifying the buckwheat flour, it is rolled out into a sheet and cut into soba noodles, then left to rest and mature twice. The binding wheat flour and buckwheat flour are thoroughly mixed. This process creates the elastic firmness. "Japanese soba" is an important "food culture" that will be passed down to future generations. In order to let everyone know its deliciousness, we offer three types of soba noodles that can be enjoyed by changing the way they are ground from just one buckwheat grain: "Seiro", "Coarsely ground", and "Inaka". "Seiro" is made by grinding the flour in-house in a stone mill. The origin is not fixed, and soybeans from the most delicious place at any given time are used. You can enjoy seasonal soba. "Cold soba is a treat" is the owner's favorite phrase. By chilling the soba noodles in an ice sink all year round, we can provide soba noodles with a firmer texture. Tempura is fried in an electromagnetic fryer that increases the momentum of oil particles, by the owner, who has been in the business for 42 years. Tempura batter was developed through years of experience. It is renowned for being crispy, something that cannot be replicated at home, and rivals that of a Tempura specialty restaurant. There are Other plenty of "soba restaurant snacks." Takaya's specialty "duck teppanyaki" is served hot at the table. "Soba restaurant tamagoyaki" is made with pure domestic chicken "Tachikawa Tamagogoro" and is fried with plenty of our proud dashi. "Ishiyaki soba miso" and "soba konnyaku" are all carefully handmade, as is "soba tofu" made with soy milk and buckwheat flour. "Five kinds of sake snacks" are served in glass dishes and topped with five dishes recommended by the owner that day. "Oyako-don (Chicken and egg bowl)" has been changed to Miyazaki Prefecture Hyuga chicken for the renewal. The eggs used to bind the egg are also pure domestic chicken "Tachikawa Tamagogoro". The yolks are a beautiful orange color, thanks to the marigolds and paprika used for feeding. We also actively use "Tachikawa vegetables" procured directly from local farmers to support the local area. In a space where jazz is playing, you can enjoy new soba dishes at reasonable prices. Young people and women are welcome to come and enjoy "soba restaurant drinking"! Please feel free to come and visit us. |
