Impressed by the careful preparation of each dish
Arrived at 17:00 on Friday. Counter seat reservation. The homemade karasumi is moist and soft with a subtle saltiness. It has a luxurious feel that instantly brings out the New Year feeling. The cream cheese potato salad is presented with a flashy presentation that belies its simple title. The potato salad, flavored with tamari soy sauce, is grilled until fragrant and wrapped in smoke. When you cut it open, you'll find cream cheese inside. The cucumber inside the potato salad is cut into large chunks. The crunch of the smoked daikon radish adds an accent. The smoky flavor and texture, along with the deep umami of the soy sauce, make this a masterpiece for adults. Sweetfish roe spring rolls served with chrysanthemum sauce. The bittersweet sweetfish goes well with the chrysanthemum sauce. 6 kinds of pickles. The coriander pickles are innovative. The flavor of the coriander and sesame oil is delicious, just like Chinese pickles. Fig and oyster salad. Packed with chunks of fruit. So luxurious! The grilled Onigiri with fukimiso are not too salty and have just the right amount of saltiness.

It's been about two years since my last visit. Every dish was surprisingly delicious and way beyond my imagination, and I was very satisfied! The biggest shock of the day was the octopus and daikon radish stew. What is this octopus so soft?! I didn't know octopus could be so tender... The contrast in texture with the daikon radish, which was cooked to retain its firmness, was also interesting. The subtle scent of yuzu added a refreshing essence to the rich flavor, making it impossible to get bored of. Another shock was the "Omurice that looks like a rolled Omelette Rice". I imagined that Omelette Rice with rolled omelet on top must be a Japanese-style Omelette Rice with rice cooked with seasonings rather than ketchup rice! But it actually looked like a rolled omelet! Instead of being wrapped in egg, it is mixed with butter rice and then fried, resulting in a visually very original omurice. The outside is thoroughly cooked while the inside is soft and creamy. The butter rice is refined and combined with the ketchup, it has just the right balance. It looks Japanese, but the taste is Western Cuisine. However, the small amount of ground sesame sprinkled on top of the ketchup adds a nice Japanese touch. Contrary to its bold appearance, it is a very delicate Omelette Rice!
