Food [16th year in business] This is the secret to the deliciousness of chicken with bones!
We use our own "special oil" extracted from birds when baking them all at once at high temperatures in a custom-made "kettle." At the end, the chicken's juices and umami-rich oil are poured over the top, which combines with the special spices to create a uniquely fragrant taste and texture. Finally, add the secret sauce to make it even more fragrant! When the dish is finished, the umami oil that collects at the bottom of the plate. At our restaurant, the most popular way to eat this deep-flavored oil is to dip watercress or rice in it!
