Asakusa Kaikaro is a long-established noodle making shop that is used by many famous Ramen shops. Our restaurant is a rare place where you can eat "low-hydration pasta fresca" made by such a popular noodle manufacturer. This pasta, called Karahig Noodles, has a chewy texture that is unique to its low water content, and the more you chew, the more the wheat flavor spreads. Another characteristic of these noodles is that they do not spread even when cooled, and the noodles do not stick together.
