At Hanuri, the grilled kimchi for samgyeopsal and the kimchi for kimchi pancakes are all handmade. It is marinated for a full two days. We are extremely particular about the long onions we use for our green onion salad. Every morning, we carefully select and bid on the long onions from famous domestic growing areas. And above all, our matured miso is different.
Once crabs die, they begin to deteriorate rapidly. Their blood quickly turns black and emits a foul odor. Blue crabs in particular deteriorate faster than other crabs. That's why Hanuri is so particular about keeping our crabs alive. Our crabs are lively! If you request it, we can send you a video of the crabs we stock. Generally, I will purchase the products at the market on the day of your reservation. (I will not provide any products that are more than 2 days old.) I think the best way to make Ganjang Gejang is to pickle the crab while it is still fresh.
