Food waste is very minimal as we only serve one course meal and only take reservations. For wine, we use CORAVIN to prevent the wine from deteriorating and ensure that nothing is thrown away.
By using ingredients from nearby sources, we reduce transportation costs and the associated environmental impact. We promote trade with fair trade agricultural products and fair trade farmers. We use cacao and Chocolate from companies that practice fair trade. We also use meat and dairy products that take animal welfare into consideration. We use wild seafood that has been sustainably caught and sustainably farmed. We do not use endangered species.
We offer vegan menus in accordance with guest requests. We Other cater for vegetarians, pescatarians, and religiously-related dietary needs.
Hajime Yoneda himself is a director of a disaster relief organization, and has been involved in relief efforts in the Great East Japan Earthquake and other disasters across Japan. He also negotiated with the government on a compensation system for the food and beverage industry during the COVID-19 pandemic, and is currently a director of the Food and Beverage Federation. In the local area, he is considering a project to support the unemployed, homeless, and child hunger through food.
We use NORDAQ filters for water and bottle it in-house, which helps reduce the problem of plastic bottles and the environmental impact of transportation. Chopsticks and other items are not disposable, but can be washed and reused. We have stopped using straws since 2020.
