At Sagami, we are particular about our soba, made from carefully selected buckwheat flour. The most delicious state of soba is said to be when it is "freshly milled, freshly kneaded, and freshly boiled." Since buckwheat flour oxidizes over time, we mill it daily using a stone grinder which is set up in our restaurant. The freshly ground flour is then used to make our noodles on-site, and we boil them each time you place an order.

Every day, we carefully make broth in the morning and evening without fail. This is because the flavor of the broth diminishes over time. We blend specially selected ingredients tailored to our region, starting with the rich, flavorful Bonito.
