In particular, ``Wanko Soba'' is made by boiling and deep-frying freshly cut handmade soba noodles, which spread over a short period of time and reduce the flavor, so instead of serving them all at once in a large bowl, they are served in small bowls and rearranged as they are eaten. The bowl used for it was called ``wanko'' in the local dialect.
