This is our most popular dish, made using carefully selected A5 grade Hida beef that is perfect for Sushi. You won't find this quality of Hida beef anywhere else. When it comes to koushi, this is the first thing that comes to mind.

Our Hida Beef Hitsumabushi is made with A5 grade sirloin. The rice is vinegared, so you can enjoy it until the very end. The final Ochazuke（boiled rice with tea）is ochazuke with special bonito broth.

We use 100g of A5 grade sirloin. We grill it with only salt and pepper so that you can enjoy the taste of the meat. You can enjoy various flavors with our homemade sauce, grated daikon ponzu sauce, Oku-Noto natural salt, yuzu pepper, wasabi, etc. 150g 5000 yen 200g 6000 yen

This chirashi Sushi is the perfect combination of A5 Hida beef and vegetables. It was originally a seasonal menu item, but due to the requests of many customers, it has become a year-round menu item. Please crumble the soft, soft-boiled egg and mix the meat and vegetables well before enjoying.

This dish won the runner-up prize at the first Hida Takayama Gourmet Grand Prix. The beef tendons are simmered for three days until they are tender. The daikon radish, konjac, and burdock root that are simmered together are also well-seasoned, enhancing the umami of the meat.

We go to the market every morning to purchase the most seasonal fish of the season. We also prepare the fish in a way that suits it, such as marinated in tsukemono, kombu-jime (marinated with kelp), or vinegar-jime (marinated in vinegar). Please enjoy the seasonal flavors. (9 to 10 pieces)

This tuna bowl is a perfect combination of refreshing yellowfin tuna and negitoro. You can enjoy two different flavors by adding mountain yam to your liking.

Oyako-don (Chicken and egg bowl) of oyakodon (chicken and egg on rice) with moderately fatty salmon and salmon roe marinated in a homemade sauce. The salmon is lightly seared to enhance its aroma and go perfectly with the salmon roe.
